McGriddle Bites taste exactly like a sausage McGriddle from McDonald’s turned into mini muffins. This easy breakfast captures the fluffy pancake, savory sausage, and sweetness from the syrup in every single bite.

Mini McGriddle Bites Recipe
One of my favorite breakfast items from McDonald’s is a McGriddle sandwich. The syrup-filled pancake “buns” balance the salty sausage and soft eggs. It’s a super tasty breakfast item that is typically my go-to if I run through the drive-thru on busy mornings. I’ve always wanted to try to recreate it at home and this recipe for McGriddle bites has the sweet and savory flavors in a tiny poppable form that’s perfect for on the go. Plus, it’s super kid-friendly! My kiddos love breakfast food and they love bite-sized food even more.
Why You’ll Love These McGriddle Bites
- Perfect for making ahead. Double the batch and keep them in the freezer for the refrigerator for a quick breakfast option.
- Freezer friendly. These freeze amazingly! They are so easy to reheat, too. Even from frozen!
- Kid-approved. As I mentioned before, my kids love this recipe and I have no doubts that yours will, too.
What You’ll Need
This quick and easy breakfast only needs 5 ingredients. It’s great for a tight budget!
- Pancake mix: Buy your favorite complete mix or make it homemade pancake mix.
- Water: Instead of preparing the pancake mix according to the directions, add the amount of water listed in this recipe.
- Cheese: I use shredded cheddar cheese but you can use any type of cheese you prefer.
- Maple syrup: Use pure maple syrup for authentic flavor or any brand of breakfast syrup.
- Breakfast sausage: I use plain ground breakfast sausage. Feel free to substitute maple for sweetness or hot for a kick.
How to Make McGriddle Bites
Here are the super easy step-by-step directions on how to make these copycat McDonald’s breakfast sausage bites.
- Prepare the oven and muffin tin. Preheat the oven to 400 degrees F and grease your muffin tin or line it with paper liners.
- Brown the sausage. Heat a skillet over medium heat and cook the sausage until no longer pink. Drain the fat and set it aside.
- Combine remaining ingredients. Add the rest of the ingredients to a large bowl and mix until well combined.
- Add sausage. Stir in the crumbled sausage.
- Scoop the batter. Fill each cavity of the muffin pan with the sausage McGriddle batter.
- Bake. Place in the oven and bake for 12-15 minutes or until the edges or golden and the batter is set and fully cooked.
- Serve. Drizzle with extra syrup and enjoy!
Tips and Variations
- Swap the meat. Use chopped bacon or ham in place of the breakfast sausage.
- Cool before freezing. Be sure to cool the McGriddle bites before placing them into the freezer to preserve their texture.
- Use a toothpick. If you aren’t sure if they are fully baked, insert a toothpick into the center of one of the sausage bites. If it comes out clean, they’re ready.
Storage Directions
- Refrigerate: Store these McGriddle bites in an airtight container in the refrigerator for up to 4 days.
- Reheat: Place them on a microwave plate and heat for about 30-40 seconds. If reheating from frozen, heat for 1-1 ½ minutes.
- Freeze: Store in a freezer-safe bag for up to 3 months.

We love these! Was wondering if I could use homemade pancake mix instead of store bought? Would they still hold up?
Thanks Sara! Yes, homemade mix will work well as a substitute.
Very good and easy to make. Used a French toast stick pan to make half and mini muffin for other. Turned out great.
Thanks Beth!
these sound so good! can you leave out the maple syrup?
Hi Lea. Yes you can omit the maple syrup and follow the recipe as written and still have a great result.
These sound amazing and I’m excited to make for a large group of people! How many people will this recipe serve?
Hi Ariel. The recipe yields 48 bites so it would depend on what else you are serving as to what the serving size would be. I would estimate between 2-4 per person.
We love them. I made mine dairy free.
Thank you Phyllis!
These are a FAVE in my house! So easy to make and they freeze and reheat nicely. Thanks for the share!
Thanks Emily!
I have celiac so I made these w gluten free mix (king Arthur) and Fair life milk instead of water to add more protein! I put ground wild boar sausage in mine and I made my boyfriends with Beyond Sausage patties because he is vegetarian. I put a spoon of batter in the muffin tin, then the patty, then covered it with more batter. Baked 13 mins. Fantastic! Huge hit! He ate 3 immediately! Haha
Sounds delicious Jane! Thanks!
So Good!! Replaced water with whole milk and bacon instead of sausage (bc my teens like the bacon McGriddle). Served it with cheesy, scrambled eggs! HUGE HIT!! Freezing the leftovers bc I doubled the recipe! *The kids added more syrup but I still don’t think I’ll add more to recipe bc it baked so nicely.
Glad to hear that Toni! Thanks!
Can you use milk instead of water?
Hi Stacy. I haven’t tried milk with this recipe but yes I think you could substitute milk with good results.
I just did the substitute with milk instead of water and turned out really good.
These. Are. DELICIOUS! We can’t stop eating them. They are absolutely easy to make and there is plenty in the batch for weekday heat and eat “to go” breakfasts!
Thanks Emily!
Can you make these in bigger muffin tins??? These look like mini tins? If we used bigger do we just increase time or lower temp and increase time?
Hi Cat. Yes you could use regular muffin tins instead of the mini tins. Temp will be fine, but you will probably need to extend the baking time a little.
Could you use milk or half and half instead of water ?
These were amazing and so easy to make. And you can freeze them. Double win!! Thanks for the great recipe!
Thank you Lisa!
