Mint Chocolate Lasagna

This Mint Chocolate Lasagna is so tasty and perfect for any occasion. This is a layered dessert that can be stored in the fridge or freezer. This recipe is so tasty with a crunchy crust and mint layer for a cool and tangy twist. Ingredients

  • Cookies– You will be using Oreo Cookies for this recipe.
  • Butter– Use unsalted butter to control the amount of salt in the recipe.
  • Mint Chocolates- You will need dark chocolate Ghirardelli brand.
  • Cream Cheese- Use softened or at room temperature.
  • Powdered Sugar- This is great for homemade icing.
  • Milk- You can use whole or 2% milk.
  • Cool Whip– This will be added on top of the finished dessert.
  • Food Gel Dye- You will need this in the color green.
  • Pudding- You will need to get chocolate pudding for this recipe.

How to Make Mint Chocolate Lasagna

To start, in a blender or food processor, place the Oreos and pulse until chocolate crumbs form.

First, use parchment paper to line a 9x 9-inch baking dish, being sure to leave some extra hanging over the edges to make it easier to take out the lasagna.

Secondly, the butter into a heat-safe dish and melt in the microwave in 10-second intervals.

Thirdly, add the melted butter into the crumbs and combine, leaving about two tablespoons of the crumbs to add on top later.

Next, the crumbs into the prepared baking dish and pressed down gently to form a crust, then place into the freezer.

Filling:

To start, open all of your mints and put them on a piece of parchment paper, and begin cutting them into small pieces.

First, take the baking dish out of the freezer and top with the pieces of mint, then, returned back to the freezer.

Secondly, in the bowl of a standing mixer, add in the cream cheese and beat until smooth and creamy.

Thirdly, put in the Cool Whip powdered sugar and food coloring gel and combine until fully incorporated.

Next, add a few more drops of the green food coloring, if the color is not bright enough for you.

In addition, take the baking dish out of the freezer and begin adding the green layer on top of them and pieces using a spatula to spread out evenly.

Furthermore, you will need to place the baking dish back into the freezer for another hour.

Finally, place the chocolate pudding mix milk and cool whip into a large bowl, and whisk until thick and creamy.

Mint Chocolate Lasagna

Ingredients
  

FOR THE CRUST:

  • 22 Oreo Cookies
  • 6 Tablespoons of butter - melted
  • FOR THE LAYERS:

GREEN LAYER:

  • 1 package of Dark Chocolate Ghirardelli Mint chocolates
  • 1 package of Cream Cheese - 8 ounces - softened
  • 1 cup of Powdered Sugar
  • 2 cups of Cool Whip
  • 5 to 7 drops of Green food coloring Gel

CHOCOLATE PUDDING LAYER:

  • 1 large box of Chocolate Pudding - 6 - 8 ounces
  • 2 cups of Milk
  • 1 Cup of Cool Whip

TOP LAYER

  • 1 - 12 ounce tub of Cool Whip - thawed
  • 2 Tablespoons of Oreo crumbs
  • 2 Ghirardelli Mint's - chopped

Instructions

  • Place the Oreo's in a blender or food processor, and pulse until the cookies become chocolate crumbs.  Line a 9 X 9 dish with Parchment paper, making sure to leave the edges of the paper hanging over two sides of the dish.  Place the butter in a dish, and Microwave it at 10-second intervals until it melts.  Pour the batter over the crumbs, and stir well to blend.  Reserve 2 Tablespoons of crumbs for the top layer.  Press the Chocolate crumbs into the bottom of the dish, and place the dish in the freezer.
  • Open the Mints, and place them on a piece of Parchment paper.  Cut them into small pieces.  Remove the dish from the freezer, and sprinkle the pieces over the chocolate crust. Place the dish back in the freezer.
  • Place the Cream Cheese in the mixing bowl of a stand mixer, and blend until smooth and creamy.  Add the Cool Whip, Powdered Sugar, and Food Coloring Gel, and mix until well blended.  If the green color is not bright enough, add a couple of drops, and blend, and continue until you've reached the desired color.   Remove the dish from the freezer, and spread the green layer over the Mint pieces, smoothing out evenly in the dish.  Place the dish back in the freezer for at least an hour
  • In a large bowl, place the Chocolate pudding mix, milk, and Cool Whip, and whisk until thick and creamy.
