Peanut Butter Stuffed Chocolate Cookies

There is nothing better than chocolate and peanut butter, especially in a cookie recipe. These cookies are like a Reese’s, but in the form of a cookie. If you are not a fan of chocolate, try our other peanut butter stuffed cookies loaded with all peanut butter!

Ingredients You’ll Need:

For the Cookies:

  • Flour- Use all-purpose flour for the best results.
  • Cocoa powder- I like to use Hershey’s brand unsweetened dark cocoa powder.
  • Baking Soda- This will allow the ingredients to rise in the oven.
  • Kosher salt-Use this to bring out the flavor in the recipe.
  • Sugar- You will need granulated and light brown sugar.
  • Butter- Use unsalted to control the amount of salt in the recipe.
  • Peanut Butter- You’ll want to use creamy.
  • Egg- Use eggs that are at room temperature.
  • Vanilla- Use pure vanilla extract for the best flavoring.
  • Milk- This adds moisture to the dough.

For the Filling

  • Peanut butter
  • Powdered sugar

How To Make Peanut Butter Stuffed Chocolate Cookies

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  • In a large bowl, mix the peanut butter and powdered sugar together until fully combined.
  • Using a teaspoon, spoon out filling and roll into a ball and place on a plate.
  • Place the balls in the fridge and chill for 10 minutes.
  • In another bowl, combine the flour, cocoa powder, baking soda and salt
  • Using a standing mixer, cream together the butter, sugars, milk and peanut butter until smooth and creamy.
  • Mix in the egg and vanilla and mix until combined
  • Stir in the dry ingredients
  • Scoop out some cookie dough with a small ice cream scoop and roll into a ball.
  • Lightly push your thumb into the center of the chocolate cookie dough to make indents.
  • Place a peanut butter mixture filling into the center and mold the dough back into a round ball, covering up the peanut butter filling.
  • Roll the cookies in granulated sugar and place on baking sheet.
  • Bake in the oven for 8-10 minutes

Tips

  • You can chill the peanut butter filling before rolling it into balls. This makes it a little easier to handle.
  • You can store these cookies in an airtight container at room temperature for up to one week.
  • For an extra wow factor you can add chocolate chips to the tops of the cookies right when you remove them from the oven.

Ingredients
  

Cookies:

  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter softened
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1 egg
  • 2 tablespoons milk

Filling:

  • 3/4 cup smooth peanut butter
  • 3/4 cup powder sugar

You will use another 1/2 cup sugar for rolling the cookies.

    Instructions

    • Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
    • In a large bowl, mix the 3/4 C peanut butter and 3/4 C powder sugar together until fully combined.
    • Using a teaspoon, spoon out 1 tsp of the filling and roll into a ball.
    • Place the filling balls onto a plate and place into the fridge for 10 minutes.
    • In a medium bowl, combine the flour, cocoa powder, baking soda and salt.
    • Using a standing mixer, cream together the butter, sugars, peanut butter and milk until smooth and creamy.
    • Mix in the egg and vanilla and mix until combined.
    • Stir in the dry ingredients.
    • Using a small ice cream scoop, scoop out some dough and roll into a ball.
    • Place onto the cookie sheet and repeat steps with remaining dough.
    • Once all the dough has been rolled, lightly push your thumb into the center of the dough the make indents.
    • Place a peanut butter filling into the center and mold the dough back into a round ball, covering up the peanut butter filling.
    • Repeat step with remaining cookies.
    • Place 1/2 C of sugar into a bowl and roll all of the cookies into it.
    • Bake in the oven for 8-10 minutes.
    • Enjoy!
