Easter Peeps Cookie Bars

Peeps Cookie Bars

This recipe is really similar to your usual chocolate chip cookie bars with one big (delicious) addition: Easter Peeps! Make sure you find the pastel colored M&Ms for the fun spring pop of color. These are usually in the holiday aisle of the grocery store.

I like cookie bars much more than traditional chocolate chip cookies because they’re just so much easier. You don’t have to scoop out the batter into individual even sized cookies, you just put the whole thing in!

Ingredients:

  • Butter
  • Brown Sugar
  • Sugar
  • Eggs
  • Vanilla
  • Flour
  • Cornstarch
  • Baking Powder
  • Salt
  • M&Ms
  • Chocolate Chips
  • Peeps

How To Make Easter Cookie Bars

Start by melting your butter and mixing that with the sugars. Let that cool for a couple of minutes before adding in the eggs, egg yolk and vanilla extract.

In a separate bowl bowl whisk together flour, cornstarch, baking powder and salt. Then, add that to the sugar mixture.

Stir in the M&Ms and chocolate chips and pour the batter into a greased 9X13 dish.

After about 25 minutes when the cookie bars are finished cooking, pull the pan out and lay Peeps on top. Put them back in the oven for about 5 minutes to melt them on top.

Let these cool and enjoy!

Keep these stored in an airtight container for up to 5 days.

These cute Easter treats will be the perfect addition to your holiday menu. Enjoy with a big glass of milk or a cup of coffee.
