Sausage and peppers may be one of the easiest recipes out there to make, though there is more to the dish than the name applies. In addition to Italian sausage and bell peppers, this dish also features sliced onions, tomato paste, broth, and a handful of spices and herbs.

This recipe can be made with any type of Italian sausage you enjoy, from mild straight to spicy. When I serve it to the whole family, I tend to opt for sweet or mild but then take it up a notch when it’s just for the adults. Either way, it’s a simple dinner ready in well under an hour!

  • Italian sausage – You can use either sweet, mild, or spicy Italian sausages based on your preference and desired level of heat.
  • Olive oil
  • Veggies – Onion, red bell pepper, and green bell pepper.
  • Garlic
  • Herbs & spices – Dried oregano, basil, red pepper flakes, salt, and pepper. Adjust the amount of red pepper flakes according to your spice tolerance.
  • Tomato paste – Adds a richness to the dish.
  • Chicken broth – For a richer flavor, substitute chicken broth with white wine.
  • Fresh parsley – Fresh parsley adds a burst of freshness and can be sprinkled on top before serving, but feel free to omit if not available.

How To Make Sausage and Peppers

  • Cook the sausage. Cook the sausages until browned and cooked through. Transfer to a plate.
  • Cook the veggies. Heat the olive oil over medium. Sauté the onions and bell peppers for about 5 minutes. Stir in the garlic and spices. Cook for an additional 2 minutes until the garlic is fragrant.
  • Simmer. Push the veggies to one side of the skillet and cook the tomato paste in the cleared space for a minute. Pour in the broth and bring to a simmer. Reduce to low and return the sausage to the skillet. Cover and simmer for 10-15 minutes.
  • Enjoy. Give the sausage and peppers a final stir then garnish with fresh parsley and enjoy.

  • Thicken the sauce. If you prefer a thicker sauce, you can simmer the sausage and peppers uncovered for a few extra minutes to reduce the liquid.
  • Thin the sauce. If the sauce is too thick, you can add a bit more chicken broth or wine to loosen it up.
  • Customize the flavor. One thing I love about making Italian sausage and peppers is that you can really customize the flavor by the spice level of the sausage you choose, as well as how many red pepper flakes you add.

Sausage and Peppers

Ingredients
  

  • 4 Italian sausages sweet, mild, or spicy, your preference
  • 2 tablespoons olive oil
  • 1 large onion thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional, for heat
  • Salt and pepper to taste
  • 1/4 cup tomato paste
  • 3/4 cup chicken broth or white wine
  • Fresh parsley chopped (for garnish)

Instructions

  • Heat a large skillet over medium heat and add the Italian sausages. Cook the sausages, turning occasionally, until browned and cooked through. This usually takes about 10-12 minutes. Transfer the sausages to a plate and set aside.
  • In the same skillet, add the olive oil and heat it over medium heat. Add the sliced onions and bell peppers to the skillet and sauté for about 5 minutes until they begin to soften.
  • Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste. Continue cooking for another 2 minutes until the garlic becomes fragrant.
  • Push the vegetables to one side of the skillet and add the tomato paste to the cleared space. Cook the tomato paste for about 1 minute, stirring constantly.
  • Pour in the chicken broth and stir to combine the tomato paste with the liquid. Bring the mixture to a simmer.
  • Reduce the heat to low and return the cooked sausages to the skillet, nestling them into the sauce and vegetables.
  • Cover the skillet and let the sausage and pepper mixture simmer for about 10-15 minutes, allowing the flavors to meld together.
  • Remove the lid and give everything a final stir. If the sauce is too thick, you can add a bit more chicken broth or wine to loosen it up.
  • Garnish with fresh chopped parsley and serve the sausage and peppers hot. Enjoy!
