These Strawberry brownies are a fun twist on classic fudge brownies. You get the same chewy texture like chocolate brownies, but a delicious strawberry flavor! The chopped fresh strawberries is a nice addition and the lemon glaze just sets this brownie recipe over the top! It’s the perfect sweet treat for strawberry lovers!

How to Make Strawberry Brownies

These strawberry cake mix brownies take about 10-15 minutes to prepare!

  • Preheat the oven to 350 degrees and prepare an 8 inch square baking pan.
  • Combine the cake mix, strawberries, lemon juice, and eggs into a large mixing bowl until smooth.
  • Spread the batter into the prepared baking dish and bake for 18-20 minutes or until a toothpick in the center comes out clean. Let cool for about 10 minutes before removing the strawberry brownies from the pan.
  • Make the glaze – add the powdered sugar and lemon juice into a small bowl and combining until smooth. Spoon the glaze over top of the brownies and let it drip down the sides.
  • Cool on a wire rack and cut into squares.

Tips and Variations

Skip or Change the Glaze – we love these glaze on these brownies, but they are delicious without it as well. If you’re not a fan of lemon, you can mix a Tablespoon of strawberry jam and milk with the powdered sugar to make a strawberry glaze.

Mix ins – feel free to add in some white chocolate chips or dark chocolate chips to the strawberry brownie batter.

Other Toppings – some other topping ideas are cream cheese frosting, strawberry frosting or chocolate ganache!

Serving – I love these brownies as is, but adding a scoop of vanilla ice cream makes them extra special!

Storing and Freezing

  • Store – place the strawberry brownies in an airtight container and store in the fridge for 3-4 days.
  • Freeze – Wrap each individual brownie in plastic wrap and place them in an airtight container. Freeze for up to 3 months.

Instructions

  • Preheat the oven to 350 degrees.
  • Line an 8” square baking dish with parchment paper and spray with cooking spray.
  • In a large mixing bowl, combine the cake mix, strawberries, lemon juice, and eggs with a hand mixer or fork until smooth.
  • Pour batter into the baking dish and bake for 18-20 minutes or until set (to test, insert a toothpick into the middle of the brownies until it comes out clean).
  • Let brownies cool for 10 minutes before removing the parchment paper from the pan.
  • Make the glaze by combining the powdered sugar and lemon juice until smooth.
  • Pour glaze over brownies and over the edges. Let cool completely on a cooling rack and cut into squares.

Notes

You can cut the edges off if you want clean edges on all sides. 
Add a little extra lemon juice or water to the glaze if it’s too thick.

  1. Have not made these yet. Someone asked me to make strawberry cupcakes & I see these. Look great but not sure about the lemon. Could I substitute it with a strawberry extract??

    1. Hi Fran. The lemon definitely adds to the flavor and isn’t too overwhelming. You could definitely cut back on the lemon juice and also add the strawberry extract.
