We thought it would be fun to make the Grinch from a quesadilla. We used 2 spinach tortillas, black beans, shredded cheese, and a piece from a yellow pepper.
We cut out our Grinch head shape from the spinach tortilla using kitchen scissors. Cut 1 and then use that one as a guide for the other one. We added black beans and shredded cheese on the inside of the tortillas and heated that until the cheese melted. I had a yellow pepper that will be used for another recipe so we just cut the eyes out of that. You could just use sour cream if you do not have a yellow pepper. We added cooked black beans to make the pupils, mouth, and nose. We cut out the hair with our spinach tortilla scraps.
Super easy and the boys loved it!!
