This air fryer salmon bites recipe proves that salmon doesn’t need to be kept for a special occasion. Less than 10 minutes in the air fryer results in flaky, tender bites of salmon that are lightly caramelized with the perfect balance of sweet and spicy flavor. Though since my family does like spice, I usually drizzle them with some chili crisp oil but that’s totally optional.

I love to serve these on “assemble your own” rice bowls with toppings like steamed broccoli, cucumber, and sesame seeds. They also make a great twist on my salmon salad and can be added to tacos, too.

The versatility has made these a huge family favorite, ranking up there with lemon pepper air fryer salmon and salmon burgers as the most requested salmon recipe in the house.

  • Smoky, spicy, sweet flavor. These salmon bites are seasoned with a blend of spices, including smoked paprika and chili powder. Smoked paprika instead of regular paprika really adds smoky undertones while the chili powder adds some heat. But, it’s all balanced out by a bit of brown sugar, to keep this a family-friendly recipe.
  • Ready in 20 minutes. I know many people think of a salmon as a “special occasion” food but man, it’s really so quick and easy to cook! These air fryer salmon bites take just 8 minutes to cook, so you can have dinner on the table in well under 30 minutes.
  • Versatile. Add these salmon bites to a poke bowl or other grain bowl, on top of salads, in tacos, or just add a side dish or two and call it good. There’s no single way to enjoy them and they can be repurposed to make so many different meals.

Key Ingredients

This air fryer recipe uses just a handful of ingredients to create tender, flavorful bites of salmon. Be sure to scroll down to the recipe card below for the exact measurements.

  • Salmon – Any boneless, skinless salmon fillets work. See below for my notes on thawing frozen salmon.
  • Olive oil – Or any other oil with a high smoke point to help the seasonings stick.
  • Cornstarch – Coats the salmon to create a bit of a “crust” with the seasonings.
  • Seasonings – Salt, pepper, garlic powder, smoked paprika, and chili powder.
  • Brown sugar – The brown sugar adds a subtle sweetness that balances the spice from the chili powder and chili crisp oil. Adjust the amount to taste if you prefer more or less sweetness.
  • Garnishes – I like to top my salmon bites with chili crisp oil, toasted sesame seeds, and sliced green onions when serving. A drizzle of sriracha or sesame oil can be used in place of the chili crisp oil.

Thawing Frozen Salmon

Frozen salmon works great for these air fryer salmon bites, especially for those of us who don’t live near the ocean. Frozen salmon is often fresher than the “fresh” salmon at the supermarket, as it’s frozen at peak freshness.

To thaw frozen salmon, you can leave it in the fridge overnight or, if you’re short on time, place it in a bowl of cold water for about 30 minutes. Keep the salmon in sealed plastic and change the water after 30 minutes if it’s still frozen. Be sure to use cold water, not warm water, to prevent the salmon from becoming too warm.

How To Make Air Fryer Salmon Bites

It always surprises me just how quick and easy this recipe is to make, every time I make it. The printable instructions can be found in the recipe card below.

  • Season the salmon. Toss the salmon with olive oil in a bowl. Combine the cornstarch, spices, and brown sugar in a separate bowl, then sprinkle on the salmon and toss to coat evenly.
  • Air fry. Preheat the air fryer to 400F. Place the salmon pieces in a single layer in the basket. Cook for 8-10 minutes, shaking halfway through, until golden and cooked through.
  • Enjoy. Remove the salmon bites from the air fryer. Drizzle with chili crisp oil and garnish with sesame seeds and sliced green onions, if desired.

Recipe Tips & Tricks

This air fryer salmon bites recipe is so incredibly easy but there are a few things to keep in mind to ensure flaky salmon.

  • Cook in batches. The salmon bites should be in a single layer with space between them. Depending on the size of your air fryer, you may need to cook them in 2-3 batches.
  • Shake halfway through. Give the air fryer basket a good shake halfway through the cooking time, to ensure all sides of the salmon brown and cook evenly.
  • Don’t overcook. Since the salmon bites are so small, they cook very quickly. The exact time may depend on your air fryer, so feel free to check a minute or two sooner. You should be able to easily flake the salmon with a fork.
  • Add some heat. For a spicier kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
  • Toast the sesame seeds. To toast sesame seeds, heat them in a dry skillet over medium heat, stirring frequently, until golden and fragrant.

Serving Suggestions

There are lots of ways to enjoy these air fryer salmon bites. My personal favorite is in a rice bowl with broccoli and cucumber, as shown in the photos. You can also add avocado, edamame, carrots, or other toppings with a drizzle of soy sauce, sriracha, or yum yum sauce. Quinoa or cauliflower rice work in place of the rice.

You can also serve the salmon as an entree with a few sides, like an air fryer baked potato and baked zucchini spears, or add it to tacos or a salad.

How To Store & Reheat Leftovers

  • Fridge: Store leftover air fryer salmon bites in an airtight container in the refrigerator for up to 2 days.
  • Reheat: Reheat in the air fryer at 350°F (175°C) for 2-3 minutes to maintain crispiness. The microwave will make them very soft. Be sure to not heat them too long to avoid drying them out.

  • In a large mixing bowl, add the salmon pieces. Drizzle with olive oil and toss to coat evenly.
  • In a small bowl, mix together the cornstarch, salt, black pepper, garlic powder, smoked paprika, chili powder, and brown sugar. Sprinkle the seasoning mixture over the salmon and gently toss until all the pieces are evenly coated.
  • When ready to cook, preheat the air fryer to 400°F (200°C).
  • Arrange the salmon bites in a single layer in the air fryer basket, making sure they are not overcrowded. Cook in batches if necessary.
  • Air fry for 8-10 minutes, shaking the basket halfway through, until the salmon bites are golden and cooked through.
  • Remove the salmon bites from the air fryer and drizzle with chili crisp oil, if desired.
  • Serve immediately, garnished with toasted sesame seeds and sliced green onions. Serve over rice, if desired. Enjoy!
