Who doesn’t love taco night?? It’s fun to make different types of tacos each week to keep it from getting boring like Queso Chicken Tacos, DIY Taco Bell Crunchwrap or this Taco Lasagna recipe.

Taco Lasagna

This easy dinner recipe is basically soft beef tacos in the form of a casserole. We call it “lasagna” because it is layered like lasagna with the tortillas in place of the noodles.

Ingredients You Need

  • Tortillas – any size will do, you can tear them to fit your pan
  • Ground Beef – you can substitute for ground turkey if you prefer
  • Onion – diced
  • Garlic Clove – minced
  • Taco Seasoning
  • Milk – 1%
  • Flour – to thicken the cheese sauce
  • Salsa – pick mild or hot based on your preferences
  • Paprika – for flavor and a bit of tartness
  • Salt – for flavor
  • Shredded Cheese – for the cheese sauce and also for topping

How To Make Taco Lasagna

  1. Cook the beef. Brown the ground beef with onion and seasonings; drain and set aside.
  2. Make cheese sauce. Start with a roux of flour and milk, then add in salt and paprika until it is dough like. Add in more milk until it thickens, then add shredded cheddar cheese and stir until it’s melted.
  3. Layer the lasagna. Start with a tortilla, then beef, cheese sauce and salsa. Repeat until you are out of ingredients and end with tortillas. Top with cheese.
  4. Bake. Cover and bake for 20 minutes, then uncovered for an additional ten.
  5. Garnish. You can top this with shredded lettuce, tomatoes and sour cream, or set it out for everyone to garnish theirs the way they like it.

????…when you add in the taco seasoning packet do you had water to the meat mixture as well?

    1. Jill says:

Hi Toni. You can add just enough water if needed to mix the seasoning into the meat.

Recently I saw this recipe on a Facebook post and sent it to my wife who passed it on to our daughter.

Our 30 year old daughter made a batch yesterday that my wife raved about when she visited and brought some leftovers home for me.

I reheated it for lunch today in the microwave and it was awesome. A delicious fusion of Mexican seasoning and Italian sensibility. We enjoyed it so much and decided it would make the perfect dish for a family holiday picnic, a party, or a potluck. Outstanding flavor and great comfort food.

  3. Cheryl Miller-Hill says:

I make these using the small street taco size tortillas in 6″ ramekins. Freeze and perfect for a lunch or quick dinner. Also I just use a jar of Queso for the cheese sauce.

Will try it soon, looks good! Also it’s *roux*, not “rue”

I’ve made this four times now. It’s so good. Love warming it up for lunch during the week. I recently added refried beans on the bottom layer, just thought I’d share. Also, if you use a glass pan, don’t forget to spray. I didn’t do that the first time and I lost my bottom layer. ‍♀️

      Thanks Beth!
