I love easy and delicious chocolate cookies. Baking hacks also make things so much simpler when you’re a busy parent. With these brownie cookies, you get the yummy brownie flavor and chewy texture in a cookie. The main ingredient is brownie mix, which cuts out time in preparation, but you still get that recognizable and intense chocolatey flavor that we all love in fudgy brownies.
If you have tried cake mix cookies, you are going to fall in love with brownie mix cookies. They are delectably chewy, and the addition of the chocolate chips takes it over the top! The outside of these brownie cookies are exactly like a brownie – a little crispy and flaky. While the inside is nice and fudgy!
Plus, my kids can get involved with making this recipe. Since it’s quick and easy, they can do the majority of the work, and then I put the baking sheet into the oven. They are so proud of their work when they are finished baking. Of course, taste testing will always be their favorite part – and mine, too! Honestly? These are even better than brownies, which I didn’t think was possible. I promise they will all be gone in the blink of an eye!

- Brownie Mix: You will not be preparing the brownie box mix according to the package directions. There will be a different amount of ingredients added to turn this mix into cookies. Use whatever variety of brownie mix that you love!
- Flour
- Eggs
- Vegetable Oil
- Mini Chocolate Chips: I like to add mini semisweet chocolate chips to these chewy brownie cookies.
How to Make Brownie Mix Cookies
Preparing this brownie cookie recipe is easier than ever! Combine all of our ingredients, scoop, and bake.
- Step 1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
- Step 2. Combine brownie mix and flour in a large mixing bowl with a hand or stand mixer.
- Step 3. Add eggs, oil, and water. Continue to mix until smooth.
- Step 4. Fold in chocolate chips with a rubber spatula until well distributed.
- Step 5. Scoop batter onto a prepared baking sheet with a cookie scoop. Leave 2 inches of space in between each cookie dough ball.
- Step 6. Bake for 8-10 minutes or until set and the edges start to brown slightly.
- Step 7. Allow the brownie cookies to cool in the baking trays before transferring them to a wire rack. Enjoy warm or at room temperature.
How to Store Brownie Mix Cookies
Leftover brownie cookies can be placed in an airtight container. Store them at room temperature for up to 5 days.
Tips and Tricks

- Be careful of using either a dark chocolate or bittersweet chocolate. We are not adding any additional sugar to balance out the bitterness both of these types of chocolate impart.
- For crunch, add ¾ cup chopped walnuts or pecans. You can also sprinkle with sea salt.

Ingredients
- 1 18.3 ounce box Brownie mix
- ½ cup All-purpose flour
- 2 Large eggs
- 5 Tbsp. Vegetable oil
- 1 Tbsp. Water
- ½ cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. Prepare a baking sheet with parchment paper and set aside.
- With a stand mixer or hand mixer, mix the brownie mix and flour until well combined.
- Add in the eggs, vegetable oil, and water. Mix until smooth.
- Pour in the chocolate chips until fully incorporated.
- Using a large cookie scoop, place scoops of batter on the baking sheet leaving 2 inches between each cookie.
- Bake 8-10 minutes or until done.
- Allow to cool to a desirable temperature.
