I love sliders because they’re usually super easy to make and double as both a meal and a party appetizer. Some of my favorites include birria sliders, Philly cheesesteak sliders, and cheeseburger sliders. These buffalo chicken sliders are a new family favorite and my favorite way to use slow cooker buffalo chicken!

Why These Buffalo Chicken Sliders Are A Must-Make

I love to keep this recipe handy for those times I need a quick meal or party appetizer! Here are a few reasons why.

  • Versatile. Buffalo chicken sliders can easily be paired with a side or two for a simple lunch or dinner. But with each batch making 12 sliders, they’re also a great game day or party appetizer.
  • Quick & easy. These sliders start with my hands-off slow cooker buffalo chicken, which can easily be made ahead. Then it’s just a matter of assembling them, which takes just a few minutes, and 20 minutes of baking time. So easy!
  • So flavorful! These sliders obviously have the classic buffalo chicken flavor but there’s also creamy ranch dressing and the sweetness from the Hawaiian rolls, plus the butter garlic topping. They’re so good!

Recipe Ingredients

These yummy sliders are made with just a handful of ingredients like buffalo chicken, ranch, and shredded cheese. Scroll down to the recipe card below for the exact measurements.

  • Buffalo chicken – These sliders are one my favorite ways to use crockpot buffalo chicken! One batch is the perfect amount for this recipe.
  • Celery – Diced celery adds texture to the sliders.
  • Green onions – Sliced green onions add a light earthy onion flavor, without the harsh bite of raw red onion.
  • Hawaiian rolls – Do not separate them! Keep them whole to slice horizontally. Other slider rolls will work but I love the sweetness of Hawaiian rolls. Plus, they’re usually easiest to find!
  • Ranch dressing – Use homemade ranch dressing or your favorite storebought brand. I recommend a range of 1/4 cup to 1/2 cup of ranch, depending on how spicy (or not) you want the sliders.
  • Cheddar cheese – Colby Jack, Mozzarella, or a Munster cheese would all be good choices as well.
  • Salted butter – Melted, to brush on top of the sliders.
  • Garlic cloves – For added flavor. You can also use a pre-minced jar of garlic if you need to. Be sure to use at least 2 heaping tablespoons.
  • Fresh parsley – A final garnish.

How To Make Buffalo Chicken Sliders

These sliders take just a few minutes of prep and under 20 minutes to bake! The printable version of the instructions is in the recipe card below.

  • Make the filling. Combine the buffalo chicken, celery, and green onions in a large bowl.
  • Assemble. Slice the Hawaiian rolls in half horizontally. Place the bottom half in the baking pan. Top with the buffalo chicken mixture. Drizzle the ranch dressing over the chicken and sprinkle the shredded cheese over that. Add the top half of the rolls.
  • Add the butter mixture. Combine the butter, garlic, and parsley in a small bowl. Brush over the top of the rolls.
  • Bake. Cover the pan with foil. Bake for 13 minutes then remove the foil and bake for 4-6 minutes, until the rolls are golden brown.

Tips & Variations

Here are a few ways to customize these sliders, as well as a couple of general tips.

  • Shred the cheese. Pre-shredded cheese has a pulp on it to keep it from sticking together in the bag. So you can use it, and it will melt, but it may have a slightly grainy texture to it, as it will take a bit longer to melt all over. Shredding it yourself will allow for an even quicker melt, leaving a much creamier texture as well.
  • Sliced cheese works too. Sliced of cheese can be used on the sliders but they might take a touch longer to melt, so just keep an eye on it.
  • Add some blue cheese crumbles. If you love blue cheese, consider adding some crumbles to the sliders! After baking and before serving, gently lift the top bun, sprinkle on the blue cheese, return the bun, and enjoy!
  • Adjust the heat level. These sliders are as spicy as the buffalo chicken used to make them, for the most part. For extra spicy sliders, add an extra drizzle over hot sauce when adding the ranch and/or add less ranch dressing.
  • Cover with foil. Covering the sliders with foil for the first part of baking helps prevent the buns and garlic from browning too much on top. But be sure to remove the foil for the final few minutes. The butter topping really adds a beautiful (and tasty) golden brown touch!

How To Store & Reheat Leftovers

  • Fridge. Store sliders in an airtight container or tightly covered in the fridge. They’re best enjoyed within 2-3 days.
  • Reheat. Preheat the oven to 350°F and heat covered for 10-15 minutes or until thoroughly heated.

  • Preheat the oven to 350°F.
  • In a large mixing bowl, combine the buffalo chicken, diced celery, and sliced green onions.
  • Slice your sweet rolls in half to create a top and bottom. Place the bottom half in a 9 x 13 baking pan. Spread the buffalo chicken on the bottom half of the bread. Drizzle the ranch dressing over the chicken and top with the grated cheddar cheese. Replace the top half of the bread onto the sandwich.
  • In a small mixing bowl, mix together the butter, garlic, and parsley. Brush the butter mixture over the top of the rolls.
  • Cover with foil, bake for 13 minutes, and uncover. Bake for 4-6 minutes until the rolls are golden brown and the cheese is melted.

How To Serve

Sometimes I like to top my buffalo chicken sliders with a few crunchy toppings, like coleslaw, pickles, or pickled onions. I usually just offer those on the side so everyone can add those as desired. Shredded lettuce would be another good option to add some crunch. Some additional ranch dressing or blue cheese for dipping is also a great idea.

If I’m serving these as lunch, I’ll often add a side like french fries, onion rings, pasta salad, or roasted broccoli. But often, I serve them as a party appetizer or on game day with a variety of other finger foods.
