The combination of carrots, raisins, and pineapple is so yummy. A little sweet and a little tart, a little creamy and a little crunchy. Yum! - Soak the raisins. Warm the pineapple juice in the microwave. Pour the juice over the raisins in a small bowl. Allow to sit for 10-15 minutes to plump back up. Drain.
- Combine. Stir all ingredients together in a large bowl.
- Chill. Cover the salad with plastic. Refrigerate until chilled.

Here are a few ways to customize this carrot and raisin salad and things to keep in mind while you prepare it.
- Add water if needed. If you don’t have enough pineapple juice to soak the raisins, you can also add a bit of water.
- Try apple juice. Apple juice can be used in place of the pineapple juice or if you’re a bit short as well. The flavor just isn’t quite as acidic.
- Swap out the raisins. Feel free to change it up a bit and use craisins or golden raisins in the recipe.
- Drain the raisins well. After the raisins plump up, be sure to drain and dry them to avoid making the salad watery.
