What is the Best Chocolate for Chocolate Chip Sugar Cookies?

Chocolate chip cookies can be made with many types of chocolate. These Chocolate chip cookies are made with normal milk chocolate, which I prefer over most chocolate. However, you can choose to add whatever chocolate you want most, like semi-sweet, dark chocolate, or white chocolate.

How Do I Keep Chocolate Chip Cookies Soft?

We want to enjoy cookies for a while and there are two simple ways to keep them soft. First off, you want to make sure to not overtake your cookies in the oven. Also, you want to store them in an airtight container to keep the moisture locked in.

Ingredients

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • ½ cup light brown sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 cup chocolate chips
  • ½ cup granulated sugar for rolling

Instructions

  • Add the butter and sugars to the bowl of a stand mixer fitted with a paddle attachment and beat on medium speed for 10 minutes, scraping down the sides of the bowl every few minutes. The mixture will be really pale and fluffy.
  • Beat in the egg and vanilla just until combined.
  • In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt and add it to the butter mixture and mix until combined.
  • Fold in the chocolate chips and cover and chill in the refrigerator for 1 hour.
  • After chilling, preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Use a medium cookie scoop to portion out the cookie dough and roll it into a ball and then roll it in the granulated sugar and place cookies dough balls at least 2 inches apart on the baking sheet and bake for 1o to 12 minutes until the edges begin to turn a golden brown and the tops are still light.
  • Cool on the pan for a couple of minutes before transferring to a wire rack to cool completely.

Notes

The timing of the mixing is incredibly important, do not shorten it or it will change the texture of the cookies.
Granulated sugar may be used in place of light brown sugar, but brown sugar is a very traditional ingredient of chocolate chip cookies.
The cookies should remain good for a few days at room temperature in an airtight container.
Balls of cookie dough can be frozen on a cookie sheet then transferred to a freezer bag and stored for up to 3 months.
