Easy Oven Roasted Asparagus

Asparagus is one vegetable that is quickly becoming a favorite in my family. I’ll admit that until recently, I never cooked it often but after trying bacon wrapped asparagus and asparagus casserole, I can’t seem to get enough.

This oven roasted asparagus is my easiest asparagus recipe to date. Fresh asparagus is tossed with lemon juice, butter, and a handful of spiced then roasted in the oven. Once it’s done, it’s topped with freshly grated parmesan. Simple but bursting with flavor!

  • Asparagus – Look for a bunch that is firm with no discoloration.
  • Avocado oil
  • Melted butter – Helps the seasonings stick.
  • Lemon juice – Adds a pop of bright citrus flavor.
  • Spices – Garlic powder, salt, pepper, red pepper flakes, thyme, and parsley season the asparagus.
  • Parmesan cheese – Freshly grated from the block.

  • Season the asparagus. Trim the woody ends of the asparagus spears. Place on a baking sheet in a single layer lined with parchment paper. Drizzle with the olive oil, butter, lemon juice, and seasonings. Toss to coat.
  • Bake. Bake for 8-14 minutes, until the asparagus reaches your desired doneness.
  • Serve. Top with parmesan cheese and parsley. Enjoy!

Tips for Success

Here are a few tips for making the best oven roasted asparagus.

  • Trim the asparagus. To trim the asparagus, see where the stems naturally bend. You can either bend and snap them off at this point or use a knife to trim them evenly.
  • How long should I roast asparagus? This will depend on how thick the stalks are as well as how tender you want your asparagus. I start checking at about 8 minutes.
  • Customize the seasonings. Feel free to customize the seasonings to your preference. Add more red pepper flakes for a bit of a kick or omit them if desired.
  • Prepare in the air fryer or on the grill. Though this is an oven recipe, you can make the asparagus in the, air fryer, grill, or sauté on the stovetop. too.

Serving Suggestions

Oven roasted asparagus is a very versatile dish. It goes well with any protein, such as honey glazed salmon, air fryer steak, chicken Francaise, shrimp scampi, pan seared scallops, or fried pork chops. It would also go well with various pastas (especially with a white sauce), rice, risotto, or gnocchi.

Proper Storage

  • Fridge. The leftovers do get soft if not eaten straight away, but they can be kept in the fridge for up to 3 days.
  • Reheat. Reheat in the microwave or pop in the air fryer until heated through.

Oven Roasted Asparagus

Ingredients
  

  • 1 pound asparagus ends trimmed
  • 2 tablespoons avocado oil
  • 1 tablespoon melted butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon coarse kosher salt
  • 3/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
  • 1/8 teaspoon thyme
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons parsley

Instructions

  • Preheat the oven to 425° F.
  • Clean and cut the ends of the asparagus off.
  • Add the asparagus to 2 parchment paper lined 9×13 baking sheets.
  • Top the asparagus with avocado oil, butter, lemon juice, garlic powder, salt, pepper, red pepper flakes, and thyme. With clean hands toss the asparagus in the seasonings.
  • Bake for 8-14 minutes depending on the thickness of the asparagus and if you like your asparagus al dente or softer.
  • Remove the baking sheets from the oven.
  • Top the asparagus with the parmesan cheese and parsley.
  • You can also top it with a sprinkle of red pepper flakes if you like.
