What You’ll Need
Many of the ingredients needed for this marry me chicken recipe are simple, pantry staples. Sun Dried tomatoes and tortellini can be found at any grocery store to help you make a tasty meal!
- Chicken: Boneless Skinless chicken is the easiest to work with. I recommend large chicken breasts but thighs can also be used. Cut them into bite-sized pieces ahead of time to reduce cooking time.
- Black Pepper, Paprika, Garlic Powder and Salt
- Butter
- Garlic: Fresh garlic cloves and jarred minced garlic are both great.
- Chicken Broth
- Heavy Cream
- Parmesan Cheese: This recipe benefits from the flavor of freshly grated parmesan. It also melts so much better!
- Red Pepper Flakes: This is optional for a little bit of spice.
- Sun-Dried Tomatoes: You can find these jarred at your local grocery store. Purchase them chopped or whole and chop them yourself!
- Frozen Tortellini: Any brand of frozen tortellini works fine.
How to Make Marry Me Chicken Tortellini
This meal comes together in about 30 minutes, making it perfect for a busy night or when you just want an easy, filling dinner that doesn’t take a lot of work.
- Season your chicken pieces with salt, pepper, paprika, and garlic powder.
- Cooking chicken. Heat a large skillet over medium-high heat. Melt the butter and then add the chicken. Cook your chicken thoroughly (internal temperature of 165°F) until you get a golden brown color on the outside. Remove the chicken from the skillet and set it aside.
- Make the creamy sauce. Reduce the heat to medium and add garlic, chicken broth, cream, red pepper, and sundried tomatoes. If you are omitting the red pepper flakes, skip that step.
- Tortellini. Bring the skillet to a simmer and add the frozen tortellini. Cover with a lid and cook for 7-9 minutes. Check the directions on the package of tortellini to see if you need to adjust the cooking time.
- Add Chicken and Cheese. Once the tortellini is cooked, add the chicken and parmesan cheese. Stir until well combined. Serve warm and enjoy!
Variations
- Pasta: I use cheese tortellini but spinach works as well. To make this recipe all your own, skip the chicken and use the Italian sausage variety.
- Veggies: Chopped fresh spinach or sliced mushrooms are great additions to this dish.
- Meat: Smoked sausage is also fantastic in this recipe.
- Seasoning: Italian seasoning, onion powder, fresh basil, etc. are some examples of how to elevate the flavors of this tortellini recipe with chicken even more.
How to Store Leftovers
Place leftover Marry Me chicken tortellini in an airtight container. It will stay fresh in the refrigerator for up to 3 days.
To reheat, add the leftovers to a small saucepan. Add a splash of cream or broth and heat gently over medium heat. The microwave may cause the sauce to separate.
I do not recommend freezing the leftovers. The texture and consistency of the sauce will change and it will not reheat well from frozen.
