I love Chipotle. They have so many delicious and fresh options. However, I enjoy cooking at home. So, that’s where this copycat recipe comes in. It is my version of garlic guajillo steak made with lots of fresh garlic, tangy lime juice, and NY strip. This type of recipe is traditionally made with flank steak – which you can use instead if you prefer – I just love how juicy and flavorful NY strip steak is.
You’ll notice that this recipe includes both a marinade and a dry rub. The marinade is for infusing flavor into the meat while the dry rub gives us a zesty and delicious crust on the outside. The sear on the steak is going to take this dish to the next level. I’m getting hungry just thinking about it!

- NY Strip Steaks: They should be around 1lb each.
For the Marinade:
- Limes: All you need is the juice.
- Guajillo Peppers: Leave them whole.
- Garlic: Minced
The Dry Rub:
- Dried Cilantro
- Salt & Coarse Ground Pepper
- Garlic Powder
- Cumin
- Ancho Chili Powder
- Garlic Cloves
How to Make Garlic Guajillo Steak
This is how you marinate, season, and cook the perfect garlic guajillo steak. Following these steps will ensure the most tender and juicy steak possible.
- Add the steak, juice from 2 limes, minced garlic, and 2 guajillo peppers to a zip-top bag. Allow the meat to marinate at room temperature for at least 45 minutes.
- Preheat the oven to 450 degrees F.
- Remove the stems and seeds from the remaining guajillo peppers. Bake for 5 minutes in the oven on a foil-lined baking sheet.
- Place the baked peppers and the garlic cloves in a food processor. Blend until it looks like crumbs. Then, place the mixture back on the baking sheet and bake for an additional 5 minutes.
- Return the mixture to the food processor and add all of the seasonings for the dry rub. Grind until it is powder.
- Prepare a large skillet over medium-high heat and coat with oil.
- Remove the steak from the bag and pat dry. Cover the marinated steak with a dry rub while the pan is heating.
- Sear on both sides for about 3 minutes then let it rest for 5 minutes before slicing.
- Slice the steak and coat with the remaining lime juice and chopped cilantro.
- Serve in a bowl over rice and your favorite toppings.

Garlic Guajillo Steak (Chipotle Copycat)
Ingredients
- 2 (1 pound each) NY strip steaks
- 5 limes juiced
- 5 guajillo peppers
- 2 Tablespoons minced garlic
- 1 Tablespoon dried cilantro
- 1 teaspoon salt
- 1 teaspoon garlic Powder
- 1 teaspoon cumin
- 1 teaspoon coarse black pepper
- 1 teaspoon ancho chili powder
- 4 Garlic cloves
- 2 tbsp Fresh bunch Cilantro
For serving
- Cilantro lime rice
- chopped Romaine lettuce
- Pickled red onions
- Pico de Gallo
- Guacamole
Instructions
- Add steak, juice from 2 limes, minced garlic, and 2 guajillo peppers to a zip-lock bag. Allow steak to marinate at room temperature in the bag for 45 minutes.
- Preheat the oven to 450*.
Make the Rub
- Remove the stems from the peppers and as much seeds as possible. Place the peppers onto a foil lined baking sheet. Bake for 5 minutes.
- Remove peppers and add to a food processor along with garlic cloves and grind into crumbs. Place back into the oven and bake for 5 minutes.
- Return to the food processor. Grind into a powder. Add to a bowl and combine with dried cilantro, salt, garlic powder, cumin, black pepper, and ancho chili powder.
Cook the Steak
- Heat a large skillet over high heat. Coat the pan with oil.
- Remove steak from the marinade and pat dry. Coat the steak with the seasoning. Let rest as the pan heats.
- Once hot, add steak and sear for 3 minutes per side. Remove and rest for 5 minutes covered.
- Slice steak thin. Add to a bowl and toss with juice from 3 limes and fresh chopped cilantro.
Serving
- Add chopped lettuce, cilantro lime rice, guacamole, Pico de Gallo, pickled onions, and steak to a bowl. Enjoy!
