If you’re a fan of Mississippi pot roast, you’re going to love these Mississippi steak bites! Just like the classic pot roast recipe, these steak bites are cooked in a mixture of ranch seasoning, au jus gravy, and pepperoncini peppers and juice. I’m not sure who came up with that flavor combination originally (someone in Mississippi, I presume!), but it’s SO good. I also appreciate the fact that the crockpot does all of the heavy lifting, very similar to my Dr Pepper steak bites. This one is perfect for busy weeknights!

Why These Mississippi Steak Bites Are So Good
- Dump & go recipe. This Mississippi steak bites recipe is one of those truly easy crockpot recipes where everything just gets dumped into the crockpot and you get to come back hours later to dinner ready to serve. The only other step is quickly searing the steak bites.
- Tender, juicy steak. I used sirloin in this recipe and it ends up so tender and juicy after slow-cooking all day. Other cuts of beef work too, so use whatever is on hand.
- So flavorful! Like other Mississippi recipes, these steak bites are made with a combination of ranch seasoning, au jus gravy mix, and pepperoncini peppers. The combination is savory, meaty, and a bit tangy. So, so good!

- Steak – I find that sirloin steak is optimal for steak bites. It’s tender after being slow-cooked and has lots of flavor.
- Olive oil – Or other oil to sear the beef.
- Garlic & onions – Aromatics to add flavor to the dish.
- Aus jus gravy – Regular brown gravy packets also work, though au jus gravy in particular adds lots of meaty flavor.
- Ranch seasoning – Such as Hidden Valley. Using ranch seasoning keeps the prep super simple and eliminates the need for measuring individual spices.
- Butter – Salted or unsalted both work, depending on your preference.
- Beef broth – I highly recommend low sodium or unsalted broth, since the gravy itself can be quite salty.
- Pepperoncini peppers – I like to use sliced peppers but 6 to 8 whole peppers work too. A bit of the juice will also be added for extra flavor.
How To Make Mississippi Steak Bites

- Sear the steak. Heat the olive oil over medium-high heat. Sear the chunked steak for 2-3 minutes on both sides.
- Add to the crockpot. Add the seared steak to the crockpot. Top with the remaining ingredients.
- Cook. Cover the crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. Enjoy!

Recipe Tips & Variations
Here are a few easy variations for this Mississippi steak bites recipe, plus a few general tips.
- Sear the steak. I know it can be tempting to skip the searing step at the beginning of a crockpot recipe, but it really does make a difference! It adds flavor to the dish overall and locks the juices inside the steak. Plus, the texture is better, in my opinion!
- Swap the sirloin. Stew meat, chuck roast, flank steak, and ribeye are all good replacements for the sirloin. Other meats, like chicken and pork, can also be used.
- Skip the aromatics. The onions and garlic add flavor to this dish, but if you’re in a hurry, they can be omitted.
- Add some veggies. For a more filling meal, add some halved baby potatoes and baby carrots to the crockpot with the steak.

Serving Suggestions
Mississippi steak bites are typically served over mashed potatoes. I like to ladle extra sauce over the potatoes as a gravy. It’s so good! I’ll often add a simple side salad or some steamed veggies.
Other options include serving it over egg noodles or rice. Basically, anything to soak up the yummy sauce!
How To Store & Reheat Leftovers
- Fridge. Refrigerate leftover Mississippi steak bites in a sealed container for 3 or 4 days.
- Reheat. Reheat on the stovetop over medium heat for 10-12 minutes until heated through.

- 3 pounds sirloin steak cut into bite-sized chunks
- 2 Tablespoons olive oil to sear beef
- 1 onion diced
- 3 garlic cloves minced
- 1 ounce envelope au jus gravy
- 1 ounce ranch seasoning mix
- 1 stick butter 8 tablespoons
- 1 cup beef broth low sodium or unsalted
- 1 cup sliced pepperoncini peppers
- ¼ cup pepperoncini juice
Instructions
- Heat a large skillet over medium-high heat with olive oil. Sear steak bites for 2-3 minutes on both sides until browned. Transfer to crockpot.
- Top with onions, garlic, au jus gravy, ranch seasoning, butter, pepperoncini peppers with juice, and beef broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir before serving.
