- Sweet potatoes – Be sure you’re using the bright orange sweet potatoes, which might be called ‘yams’ in your grocery store.
- Olive oil
- Butter
- Fresh garlic
- Fresh parsley
- Salt
- Black pepper
- Fresh Parmesan cheese
How to Make Smashed Sweet Potatoes
Trim the ends off the sweet potatoes, then cut them into 2-inch thick (or slightly thicker) rounds.
Place the cut sweet potatoes in a pot of water, then bring to a boil over high heat. Boil until they are fork tender in the center.
Remove the sweet potatoes from the water and place them on a baking sheet that has been oiled well with olive oil. Use a fork to smash each piece of sweet potato.
In a small bowl, combine the melted butter, freshly minced garlic, and fresh chopped parsley.
Spoon the garlic butter over the smashed potatoes.
Sprinkle freshly grated Parmesan cheese over the potatoes.

Ingredients
- 4 large sweet potatoes
- 1 tablespoon olive oil
- 1/4 cup butter melted
- 4 cloves fresh garlic minced
- 1 tablespoon fresh parsley chopped
- 1/4 cup fresh grated Parmesan cheese
- salt and pepper to taste
Instructions
