They’re like mini apple pies and are so much easier to serve!

If I had to choose, apple is my all-time favorite pie. There are many ways to make it and serve it. Plus, it tastes amazing warm out of the oven or at room temperature. You can’t go wrong! So, you can probably imagine how often I like to incorporate warm apples and cinnamon into other desserts. That’s where these apple pie cookies came from! They taste exactly like a homemade apple pie and make your house smell amazing!

One of my favorite parts of this apple pie cookie recipe is how cute they are! The design of the pie crust resembles the classic lattice that many bakers use to top their apple pies. They are perfectly golden brown mini apple pies that make wonderful gifts!

One of my favorite things about these easy Apple Pie Cookies is the short ingredient list. Scroll down to the recipe card for exact measurements.

  • Apple pie filling. Canned filling makes this recipe quick and easy. Chop the apple pieces smaller so you get apple filling in every cookie without large pieces getting in the way when cutting them out. You can also make my homemade apple pie filling and use about 1½ cups instead.
  • Refrigerated pie crust. You’ll need a package containing two crusts—one for the bottom and one for the lattice topping. Homemade pie crust works too.
  • Caramel sauce. Spread underneath the apple filling for a delicious caramel apple flavor. Homemade or store-bought caramel both work.
  • Egg and milk. Whisked together to make an egg wash that helps the crust bake up beautifully golden.
  • Sugar. Sprinkled over the crust for a sweet, slightly crisp finish.
  • Cinnamon and nutmeg. Give the tops that warm apple pie flavor.

How to Make Apple Pie Cookies

This is such a quick and easy recipe to execute! It has a lot of shortcuts, but you still end up with delicious apple pie cookies. I love the minimal prep time involved.

  • Preheat your oven to 350 degrees F. Cover a 12-inch pizza pan with parchment paper.
  • Prepare the pie crust. Lay out one of the pie crusts on top of the parchment paper. Make sure the edges are rolled flat. Spread the caramel sauce evenly over the bottom crust. This layer can be as thick or thin as you want.
  • Prepare the filling. Chop the apples in the filling into medium bite-sized pieces. Then, spoon the pie filling over the caramel sauce and make sure it is evenly distributed.
  • Make the lattice pattern. Take a cutting board or a baking sheet with a silicone mat and roll out the second pie crust. Make sure the edges are flat. Slice the pie crust into ¼ inch strips using a pizza cutter or knife. Layer in a lattice pattern on top of the apple pie filling.
  • Cut out the cookies with a 2 ½ inch round cookie cutter. Carefully separate the cookies on the parchment paper and remove the excess crust.
  • Make the egg wash. In a small bowl, beat eggs and milk. Brush the tops of the cookies with a pastry brush.
  • Topping. Mix sugar, cinnamon, and nutmeg in a separate bowl and sprinkle over each apple pie cookie.
  • Bake. Bake on the pizza pan or a cookie sheet for 20-25 minutes. The dough should be cooked through and golden brown on top. Remove the pan from the oven and allow the cookies to cool for 5 minutes before transferring to a cooking rack.
  • Serve warm with an extra drizzle of caramel sauce!

Tips and Variations

  • Thaw the pie crust first. Cold pie crust tends to crack when you unroll it. Let it soften according to the package directions before assembling the cookies.
  • Chop the apples small. Large apple pieces make the cookies harder to cut and can cause the filling to spill out.
  • Don’t add too much filling. You want enough apple in every bite without making the cookies difficult to separate.
  • Use a pizza cutter for the lattice. It’s the easiest way to create thin, even strips of pie crust.
  • Don’t stress over a perfect lattice. You can simply crisscross the strips if you don’t want to weave them.
  • Use fresh parchment if needed. The cutting process can get messy with caramel and apple filling. Transfer the cookies to clean parchment before adding the egg wash if necessary.
  • Watch for a golden crust. That’s the best indication that your Apple Pie Cookies are finished baking.
  • Variations. Try another pie filling. Cherry, blueberry, peach, or mixed berry filling can all be used to create different mini pie cookies. Make fun shapes. Try heart-shaped cookie cutters for Valentine’s Day or leaves for Thanksgiving.

  • Let the pie crust thaw per the box directions.
  • Preheat the oven to 350 degrees. Cover a 12 inch pizza pan or cutting board with parchment paper.
  • Lay out one of the pie crusts onto the pizza pan and lightly roll out the edges until they are flat.
  • Spread caramel sauce evenly over the pie crust.
  • Evenly distribute the chopped pie filling over the caramel sauce.
  • On a cutting board, roll out the remaining pie crust and lightly flatten the edges.
  • Cut the pie crust with a pizza cutter or knife into ¼ inch strips. Using the strips create a lattice crust on top of the apple pie filling pie crust.
  • Using a 2 ½ inch round cookie cutter cut out the cookies. Remove the excess crust and carefully separate the cookies so they aren’t touching.
  • Beat together eggs and milk; brush over the tops of the cookies.
  • Mix together sugar, cinnamon and nutmeg and sprinkle over the cookies generously.
  • Bake for 24-25 minutes until the dough on top is cooked through.
  • Cool for 5 minutes on the pan and then remove to a cooling rack to cool completely.
  • Optional: serve with a drizzle of caramel sauce.
