This Cheesy Broccoli Cornbread starts with a box of Jiffy mix that is combined with cheddar cheese, cottage cheese, broccoli and a few other ingredients. Incredibly moist, fluffy and full of flavor!

If you’re wanting a unique spin on a classic cornbread recipe, this is for you! This broccoli cornbread recipe is a family favorite, even with my kids that aren’t a huge fan of broccoli. This is a great way to sneak in some veggies if you have picky eaters like I do.

Ingredients Needed

  • Cheese – You will need cottage cheese and cheddar cheese.
  • Veggies – I use chopped onion and broccoli (fresh broccoli florets or frozen broccoli) that has been thawed beforehand.
  • Cornbread Mix – Jiffy is the best brand of cornbread in my opinion.
  • Eggs and Butter

How To Make Broccoli Cheese Cornbread

  • Preheat the oven to 350 degrees.
  • Beat the eggs in a large bowl before adding in the cottage cheese and shredded cheddar. Add the chopped veggies and combine again. Pour in the box of cornbread and combine, but do not over-mix.
  • Pour the melted butter into a 9×13 inch baking dish. Spoon the cornbread mixture evenly on top.
  • Place in the oven for 40-45 minutes or until set and golden brown. Allow it to cool for 15 minutes before slicing. Serve and enjoy!

Tips & Tricks

  • If you are short on time and need to thaw your broccoli quickly, you can place it in a bowl and heat for 1.5-2 minutes in the microwave until dethawed. Make sure to not fully cook it or it will be too mushy for this recipe.
  • Allow the cornbread to cool thoroughly before storing. Wrap it in a layer of foil or plastic wrap before placing in an airtight container or Ziplock bag. Place in the fridge for up to 3 days.
  • To reheat, unwrap and place the cornbread onto a cookie sheet and set the oven to 350 degrees and bake for 8-10 minutes or until fully heated through. You can also reheat for 20-30 seconds in the microwave depending on how many slices you want.

Storing

This broccoli cornbread keeps well and doesn’t tend to dry out from the extra moisture from the broccoli and cottage cheese. Store any leftovers in the refrigerator for up to 3-4 days. Reheat in the oven or microwave.

Broccoli Cheese Cornbread

Ingredients
  

  • 4 Eggs large
  • 16 ounce Cottage Cheese
  • 1 ½ cups Cheddar Cheese shredded
  • ½ cup Chopped Onion
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cups Broccoli frozen and thawed or fresh broccoli, slightly chopped
  • 2 boxes Jiffy Cornbread Mix 8.5 oz each
  • 1 stick butter melted

Instructions

  • Preheat your oven to 350 degrees F.
  • In a large mixing bowl, beat 4 eggs slightly. Add in cottage cheese and shredded cheddar cheese and mix them together. Next add in your chopped onion, chopped broccoli, and salt and pepper, and mix. Add one box of Jiffy cornbread mix at a time and combine all the ingredients but be sure not to over-mix.
  • Pour the melted butter into a 9X13 casserole dish then add the cornbread batter in large spoonfuls in the four corners of the dish, to keep the melted butter evenly dispersed, then fill the center until all the batter is used.
  • Bake for 40-45 minutes or until set. Cornbread is best if you let it sit for about 15 minutes before slicing and serving.
