The brownies are made of cocoa powder, heavy cream, mini chocolate chips, and cherry pie filling. The trick is to be careful that the gel in the cherry pie filling isn’t added in the brownie mix.

Remove each cherry from the pie filling using a fork. You don’t have to be too precious about it, but get as much of the gel off as you can before adding to the brownie mix.

How To Make Chocolate Ganache

This is one of my favorite toppings for so many dessert recipes. It’s pretty simple to make and just two ingredients: chocolate chips and whipping cream.

Put the two ingredients in a microwave safe bowl, melt for short 30 second bursts and whisk together. Be careful not to burn it or you’ll have to start all over.

Cherry Pie Brownie Cheesecake Bars

Ingredients

Ingredients:

  • 1 C sweet unsalted sweet cream butter (room temp)
  • 2 C sugar
  • 4 eggs room temp
  • 2 tsp vanilla
  • 2/3 C cocoa powder
  • 1 C flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 C mini chocolate chips
  • 1 can of Cherry Pie Filling drained
  • 1 1/2 C semi-sweet chocolate chips plus some for topping
  • 3/4 C heavy whipping cream

Instructions

Directions:

  1. Preheat oven to 350 degrees.
  2. Line a 9×13 pan with parchment paper.
  3. Melt butter in the microwave.
  4. Remove from the microwave.
  5. Add ingredients one at a time.
  6. Add the sugar, eggs, vanilla, cocoa powder, flour, salt, and
  7. baking powder.
  8. Using your electric mixer incorporate the above ingredients.
  9. Fold in the mini chocolate chips
  10. Using a fork, lift some cherries out of the pie filling and tap the edge of the bowl. You don't want any of the jam from the filling to get into your brownie mix
  11. add the cherries into the brownie mix and mix until combined
  12. Pour brownie mix into prepared baking dish
  13. Add a few more cherries on top of the batter
  14. Bake in the oven for 30 minutes or until a toothpick comes out clean
  15. Allow to cool on the counter completely

Chocolate Ganache Directions

  1. Using a medium microwave-safe bowl, combine the chocolate chips, and heavy whipping cream
  2. Place into the microwave on increments of 30 seconds until the chocolate chips start to melt
  3. Use a whisk and whisk until chocolate is completely melted and the ganache starts to appear thick
  4. Scoop some ganache into a piping bag to use later.
  5. Pour the remaining ganache onto the cooled brownies
  6. Allow for the ganache to harden for 20 minutes
  7. Cut the tip off the piping bag and drizzle onto the brownies
