What You’ll Need
Just a few staple ingredients other than the rainbow coated chocolate chips (which are found in most grocery stores. Get the full amounts in the recipe box below.
- Sugars – Granulated sugar and light brown sugar.
- Butter and Eggs
- Light Corn Syrup – Just a small amount to add a more chewy, fudgy texture.
- Cocoa Powder – I used unsweetened cocoa powder, but dark cocoa powder can also be used.
- Other Dry Ingredients – All-purpose flour, corn starch, baking soda and salt.
- Heavy Cream and Semi-Sweet Chocolate Chips – for the fudgy chocolate ganache.
- Rainbow Coated Chocolate Chips – This is sold in most grocery stores. However, If you can not find rainbow coated chocolate chips, you can use regular semi sweet chocolate chips or mini M&Ms.
How to Make Cosmic Brownie Cookies
- Set the oven to 350 degrees and use parchment paper to line a cookie sheet. In a large bowl, add the flour, cocoa, cornstarch, baking soda, and salt and whisk to combine.
- Add the butter, white, and light brown sugar into an electric mixer and beat to combine until light in color and fluffy. Pour in the vanilla, 3 eggs, and corn syrup and combine until fully incorporated. Combine until the mixture forms and soft cookie dough.
- Form the cookies using a large ice cream scooper and arrange them 2-inches apart on a cookie sheet. Flatten the dough using your hands and bake for 15-17 minutes in a 350-degree oven.
Fudge Frosting
- In a small pot, bring the heavy cream to a simmer. In a small bowl, add in the chocolate chips and add the heated cream on top. Combine using a whisk until smooth.
- Use a spoon to add the ganache onto each cookie and top with rainbow-coated chocolate chips right away.
Storing
When stored properly these cookies can last up to 3 months. Place the cookies in an airtight container for the best storage method. Storing in the fridge will make them last 2 weeks whereas the freezer can make your recipe last even longer.

Cosmic Brownie Cookies
Ingredients
Brownie Cookies
- 1 ½ cups butter room temperature
- 1 ½ cups light brown sugar packed
- ½ cup white granulated sugar
- 3 large eggs
- 2 Tablespoons light corn syrup
- 1 Tablespoon pure vanilla extract
- 3 ¾ cups all-purpose flour
- 1 cup cocoa powder
- 1 Tablespoon cornstarch
- 2 teaspoons baking soda
- 1 teaspoon Kosher salt
Fudge Frosting
- ⅔ cup heavy cream
- 2 cups semi-sweet chocolate chips
- ⅓ cup rainbow coated chocolate chips
Instructions
- Preheat the oven to 350 degrees. Line the cookie sheets with parchment paper.
- Combine flour, cocoa, cornstarch, baking soda, and salt in a large bowl. Whisk to mix. Set aside.
- In a large mixing bowl with an electric mixer, cream together the butter, white sugar, light brown sugar until fluffy.
- Mix in the eggs, vanilla extract, and corn syrup.
- Gradually add in the flour mixture until a soft cookie dough begins to form.
- Divide the dough into 12 portions and then roll each portion into a ball using your hands.
- Place the cookie balls on a cookie sheet about 2 inches apart.
- Flatten the cookie balls into circles using the palm of your hand or the bottom of a glass (not flat, but slightly).
- Bake for 15-17 minutes until the cookies start to crack and the centers are set (not wet). Let cool before frosting.
Make the Fudge Frosting
- In a small glass bowl, microwave the heavy cream for 1 1/2 minutes or until it is boiling (or add the cream into a small pot and bring to a simmer).
- Stir in the chocolate chips and let site for a few minutes. Then stir until completely melted and smooth.
- Spoon the frosting on each cooled cookie and immediately sprinkle the rainbow coated chocolate chips on top.

Hi. I found your recipe and I am super excited to give this recipe a try. In the very beginning you say hot cocoa mix but in the recipe ingredients it says cocoa powder. Do you use hot cocoa mix or cocoa powder??
