Pancakes for breakfast are a favorite in my house served with crispy bacon. This recipe is similar to our “Puffy” pancakes, but a bit different since you don’t have to beat egg whites. Pancakes are really the only thing that fill my boys up so we are always trying new delicious ways to make them. We also have a delicious basic pancake recipe if you prefer yours not as thick.

Important Ingredients You Will Need:

  • Flour – all-purpose
  • Baking Powder and Soda – This will add the thickness to the pancakes.
  • Sugar – Granulated is used in this recipe, but you can use any sweetener you prefer like stevia, coconut sugar, or brown sugar.
  • Butter – we listed unsalted and then add the salt in to control the amount of salt.
  • Egg – only 1 egg is needed.
  • Milk – Whole milk, reduced-fat, or skim milk will work in this recipe. For dairy-free pancakes, substitute non-dairy milk for almond or oat milk.
  • Vanilla Extract – this will add a nice flavor to the pancakes.

How To Make Fluffy Pancakes

This is the absolute best fluffy pancakes recipe and I’m excited for you to try it. They’re made with simple ingredients that most everyone has on hand and ready in just 20 minutes.

Directions

  • Combine the dry ingredients in a bowl, then add wet ingredients.
  • Whisk until smooth.
  • Pour the batter on a heated pan on both sides until golden.
  • Serve with maple syrup, honey or fruit and enjoy!

Tips for Fluffy Pancakes

Do NOT Overmix – this is a common mistake and will result in losing the fluffiness of the pancakes.

Cook pancakes right away: once your batter is mixed, make sure to pour the batter in the frying pan immediately. If you let the batter sit, the baking powder will deactivate and your pancakes won’t be as fluffy.

Freezing:

  1. Let pancakes cool completely.
  2. Stack 2-3 pancakes on top of each other and cover in plastic wrap.
  3. Wrap again in a piece of aluminum foil.
  4. Freeze for up to 3 months.
  5. To thaw: unwrap the frozen pancakes and let them sit on the counter for about 5 minutes. Pull them apart and then pop them into a toaster until hot. You can also warm them up in the microwave.

Measuring the flour: Packing in flour is a common mistake that can cause any recipe to fail. Spoon the flour into the measuring cups and then use a knife to scrape off the excess flour.

  • Combine the dry ingredients in a large-sized bowl. Make a well in the center and add the milk, melted butter, vanilla and egg.
  • Whisk the ingredients together until smooth (some lumps are fine). The batter will be thick. If it's too thick for your liking, you can always add more milk to get a smoother consistency.
  • Heat a nonstick pan or griddle over medium-low heat coated with butter to grease the pan. Pour ¼ cup of batter onto the pan smooth out gently into a round shape with the back of the measuring cup.
  • When the underside looks golden and bubbles begin to appear on the top, flip with a spatula and cook on the other side until golden. Repeat with remaining batter. Serve with maple syrup, honey or fruit and enjoy!

    I made these but had to increase the amount of flour as with just the 2 cups the batter was like water. After adding the extra flour they were perfect. Easy recipe!

  3. Hello Jill, Just curious… your recipe notes say use right away or they won’t be as fluffy, but in an answer to a commenter u said waiting would have no effect. Is that because they are still good, just not as fluffy? Also, I’m afraid to try these because the recipe goes against all science and the experts at test kitchens. They say no more than equivalent of 1 1/2 tea baking pd for leavening per cup of flour or you will taste a soapy or chemical taste. All the fabulous reviews tell me I’m missing something or all I’ve read for years has been wrong. How does this work? Does the vanilla hide the “soapy” taste? I will try them anyway because they look beautiful. All mine from the “experts” are just so so.. Want to try the cinnamon roll pancakes too
    I think I will be going on a pancake binge because of u. Thanks!

    1. Hi Linda. Regarding “all science and experts at test kitchens” I’m not sure what to say…ha! I would say that the vanilla does help balance the flavor. The comment in the tips section is referring to using the batter right away. The response to the reader about making the pancakes ahead of time was referring to after the pancakes have been made.     I have not tried it yet but can the pancakes sit for a little while my family wakes up or does it have to be served imediatly so it wont deflate.

    These pancakes are good and fluffy but I need to add more flour next time. I used 500g of flour and it was still pretty thin batter. It’s hard converting cups to g because a cup can contain such different amounts of flour! I think once I get the flour down this will be my go to recipe.

    I made these and they turned out amazing! I did 1 1/2 cups of almond milk instead of cow’s milk. I also did 1 tsp vanilla extract and 1 tsp of almond extract. They turned out delicious. We had ours with syrup and bananas on top.

    1. Hi Waty. While I haven’t tried rice flour with this recipe, you should be fine using it as a substitute. You may want to add 2 tablespoons of cornstarch for consistency.

    Thank you for the best homemade pancakes recipe! Mine weren’t as high as yours but I think it’s because I over mixed it. I had already mixed everything then realized I forgot to add the melted butter so I had to mix it all up again. They still turned out fluffy and very delicious! We loved them!
