Stuffed pepper soup is way less of a hassle to make than making actual stuffed peppers, and I’m all about easy dinners. Not only is this easy, but also delicious! A combination of ground beef (or turkey), broth, tomato sauce and seasonings tossed in the Instant Pot and finished in just 10 minutes.

How to make Stuffed Pepper Soup in the Instant Pot

  • Start out by turning your Instant Pot onto saute mode. Add the ground beef to the pot and add in the garlic powder, onion powder, Italian seasoning, salt, pepper, and paprika.
  • Cook the seasoned ground beef for about 5 minutes until no longer pink.
  • Once the beef is cooked you can turn the instant pot off.  Next, you will pour in your beef broth and stir.
  • Now add your broth, chopped bell peppers, tomato sauce, and rice to the pot.  Place the lid on and set the valve to seal.  Cook for 10 minutes on manual.

Tips:

  • Use brown rice instead of white rice.
  • You can add in some red pepper flakes for a bit of heat.
  • The pressure cooker will take about 10 minutes to heat up.
  • Once you put this stuffed pepper soup in the refrigerator IF you have any leftovers, it will thicken a bit. Just add a little bit more beef broth before heating back up and serving.

  • Set instant pot to saute and cook the ground beef (or turkey) including the garlic powder, Italian seasoning, onion powder, paprika, salt and pepper until no longer pink.
  • Turn the Instant Pot off. Add the beef broth to the pot and stir, scraping the bottom of the pot. Add the diced peppers, tomato sauce, Worcestershire sauce and rice to the pot and stir. Place the lid on the Instant Pot and set the valve to sealing.
  • Cook on manual high pressure for 10 minutes. Once the 10 minutes is up, let sit for 5 minutes, then, you can open the valve to do a quick release.
  • Serve soup immediately and enjoy!
