Stuffed pepper soup is way less of a hassle to make than making actual stuffed peppers, and I’m all about easy dinners. Not only is this easy, but also delicious! A combination of ground beef (or turkey), broth, tomato sauce and seasonings tossed in the Instant Pot and finished in just 10 minutes.

How to make Stuffed Pepper Soup in the Instant Pot

  • Start out by turning your Instant Pot onto saute mode. Add the ground beef to the pot and add in the garlic powder, onion powder, Italian seasoning, salt, pepper, and paprika.
  • Cook the seasoned ground beef for about 5 minutes until no longer pink.
  • Once the beef is cooked you can turn the instant pot off.  Next, you will pour in your beef broth and stir.
  • Now add your broth, chopped bell peppers, tomato sauce, and rice to the pot.  Place the lid on and set the valve to seal.  Cook for 10 minutes on manual.

Instant Pot Soup

  • Use brown rice instead of white rice.
  • You can add in some red pepper flakes for a bit of heat.
  • The pressure cooker will take about 10 minutes to heat up.
  • Once you put this stuffed pepper soup in the refrigerator IF you have any leftovers, it will thicken a bit. Just add a little bit more beef broth before heating back up and serving.

I made this and it was very good. I will definitely make it again.5 stars

The only thing I did different was add diced tomatoes. The seasoning was spot on though. Delicious! Will definitely make again!

This recipe was very good and easy, I will definitely make it again! I used ground turkey and my husband couldn’t even tell because it was flavored so well. He typically likes ground beef better. One question, when/where do you add the Worcestershire sauce? It calls for 1 TBSP but in the directions it never tells you to add it…I left it out due to this and it was still great. I’d like to add it next time5 stars
