Mint Chocolate Chip Ice Cream Pie
This pie is the perfect way to get your fix of Girl Scouts’ Thin Mint cookies. The combination of chocolate and mint is irresistible. You’ll be addicted in no time! It’s so easy to make, too!
What You Need:
- Mint Chocolate Chip Ice Cream- You can make our Homemade Mint Chocolate Chip Ice Cream or your favorite brand of ice cream.
- Thin Mints- These cookies make the crust of the ice cream pie.
- Butter- Use unsalted butter in this recipe
- Whipped Cream– You can use Cool Whip or our Homemade Whipped Cream.
- Dark Chocolate Syrup– You can use milk chocolate as well or our Homemade Fudge Sauce.
What Can I Use If I Can’t Find thin mint girl scout cookies?
Girl Scout cookies are only around for a short time each year. But what if you want to make this Mint Pie when it isn’t cookie season? Most grocery stores carry “knock off” Girl Scout Cookies. These cookies taste great and you can use those in this pie. Mint Oreos can also be used.
How to make an Ice Cream Pie
Step 1- Softening the Ice Cream.
Take the ice cream out of the freezer and soften at room temperature.
Step 2- Crushing the Thin Mints.
In a food processor or blender, add in the 35 thin mints and combine until you have crumbs. Add in the melted butter and push gently into the bottom of the pan
.
Step 3- Ice Cream Layer.
Place the softened ice cream into the pan and spread evenly.
Step 4- Cool Whip Layer.
Spread the Cool Whip evenly on top of the ice cream layer.
Step 5- Cookie topping.
Crush the rest of the cookies into smaller pieces and add to the edge of the ice cream pie.
Step 6- Chocolate Drizzle.
Pour the chocolate on top of the cool whip layer.
Step 7- Serving.
Allow the pie to be in the freezer for at least an hour to firm and serve.
How Long Does Mint Ice Cream Pie Last in the Freezer?
You can keep this ice cream pie in the freezer for up to 3 months. Make sure it is tightly wrapped. If you leave any air exposure, then you can expect it to freeze into a solid state and become unappetizing. When serving the pie you will notice that the cookies around the edge of the pie will be soggy. This is normal, and they will be the most delicious part of the pie!

Mint Chocolate Chip Ice Cream Pie
Ingredients
- 6 cups mint chocolate chip ice cream or 48 oz store bought ice cream
- 40 thin mints
- 4 tablespoons butter melted
- 1 cup whipped cream or 8 oz Cool Whip
- 2 tablespoons dark chocolate syrup
Instructions
- Take your ice cream out and allow it to sit at room temperature until it has started to soften.
- Place 35 thin mint cookies into your food processer or blender, pulse until you have fine crumbs. Mix in the melted butter. Press the mixture into a 9-inch springform pan or pie pan.
- Add the ice cream to the pan and spread it into an even layer.
- Top the ice cream with the cool whip.
- Crumble the remaining cooking into smaller chunks and sprinkle them around the edge of the pie.
- Drizzle the chocolate over the top of the cool whip.
- Place the pie into the freezer for at least one hour to set up.
