Valentine Snickerdoodle Cookie Bars

This Snickerdoodle Cookie Bar is so delicious! If your special someone adores Snickerdoodles then this recipe is the perfect sweet treat to make for them! This recipe is not only super simple and easy to make, it also has a small list of ingredients. You can easily find most of the ingredients at your local grocery store or some you may already have in your kitchen. These treats are so delectable, soft, and chewy.

Ingredients

  • Butter- Use unsalted butter to control the amount of salt in a recipe.
  • Sugar- Every great dessert uses sugar in the recipe.
  • Light Brown Sugar- This sugar will add a slight richness to your recipe.
  • Eggs- Be sure to use eggs at room temperature.
  • Vanilla- Use pure vanilla for the best flavoring.
  • Cinnamon– You can ground your own cinnamon for the best taste.
  • Flour– Use all-purpose flour for the best results.
  • Cream Cheese- Use softened or room temperature cream cheese.
  • Powdered Sugar- This sugar is perfect for homemade icing.
  • Heavy Whipping Cream- This will help with the consistency of your frosting.
  • Valentine’s Day Sprinkles- These will be sprinkled on top of your bars.

How to Make Snickerdoodle Cookie Bars

Set your oven to 350 degrees and use parchment paper to line a 9×13 inch baking dish.

Add the flour and cinnamon into a large bowl and whisk to combine.

In another large bowl, add the butter, sugar, brown sugar, eggs, and vanilla and beat to combine.

Slowly combine the flour mixture into the wet ingredients.

Place the batter evenly into the prepared pan.

Put in the preheated oven for 20-24 minutes or until the center is set. Use a toothpick placed in the middle and it should come out clean.

Let the bars cool thoroughly.

Cream cheese frosting

Add the butter and cream cheese into a standing mixer and beat until combined.

Add in the powdered sugar, vanilla, and heavy whipping cream until smooth and combined.

Use a spatula to spread over top of the finished bars and add some sprinkles on top.

Slice into serving bars and enjoy!

What Flavor is Snickerdoodle?

Snickerdoodles are quite delicious flavor-wise. The added blend of ingredients tastes almost buttery. The added spice of cinnamon, then adds a slight cinnamon flavor.

Do Cookie Bars Need to be Refrigerated?

These Snickerdoodle bars will need to be refrigerated. The cream cheese ingredient is dairy and if left out it will spoil. You can store these in a sealed airtight container and store in the fridge which will also help with a longer shelf life.

Ingredients

  • 1 tsp pure vanilla extract
  • 1 tbsp ground cinnamon
  • 2 C flour

Cream cheese Frosting

  • ½ C unsalted butter softened
  • ½ C cream cheese
  • 1 tsp pure vanilla extract
  • 4 C powdered sugar
  • 1 tsp-3 tsp heavy whipping cream
  • 1 C valentines day sprinkles

Instructions
 

  • Preheat oven to 350 and line a 9x13 baking dish with a parchment paper
  • Using a large bowl, whisk together the flour, and ground cinnamon
  • In a large bowl, beat together the butter, sugar, brown sugar, eggs, and vanilla until combined
  • Gradually beat in the flour and cinnamon until combined
  • Spread the dough evenly into the pan
  • Bake in the oven for 20-24 minutes or until a toothpick comes out clean
  • Allow cooling completely

Cream cheese frosting

  • Using a standing mixer, beat together the butter and cream cheese until combined and smooth
  • Beat in the powdered sugar, vanilla, and heavy whipping cream until combined and smooth
  • Spread evenly onto the bars and sprinkle some Valentine's day sprinkles on top
  • Cut into bars and enjoy!
