Bacon Wrapped Avocado Burger Bombs

It’s safe to say that one of the most creative and incredibly delicious things to come from my grill recently was these BBQ Bacon Wrapped Stuffed Avocados. This is the recipe your friends and family will be asking you for. Perfect for your next cookout, summer holiday, or family gathering, these stuffed avocados are like a whole meal in one package–just add some side dishes and your meal is complete!

The Ingredients

Here’s what you’ll need to make BBQ Bacon Wrapped Stuffed Avocados (the exact measurements and full recipe instructions are below in the easy to print recipe card):

  • Ground beef – use a lean ground beef. 80/20 works well, but even leaner is better.
  • Seasoned salt
  • Ground black pepper
  • Avocados – use small to medium size avocados. You don’t want them to be over-ripe or they’ll be too mushy to make this recipe. They need to be just ripe enough to not be hard.
  • Pepper jack cheese – I buy a block of the cheese and use what I need to fill all of the avocados.
  • Bacon – you’ll want to use a thin cut bacon and you’ll need about 5 strips of bacon per avocado.
  • BBQ sauce – any flavor you like.

How to Make Burger Bombs

  • Preheat a gas grill to medium heat (350F).
  • In a large bowl, combine the ground beef, seasoned salt, and black pepper.
  • Cut each avocado in half and remove the pit. Fill the center of each avocado with as much cheese as will fit, then put the two halves of each avocado back together to recreate a whole avocado.
  • Gently peel (by hand) the avocado peel away from each avocado, leaving fully peeled whole avocados that are stuffed with cheese in the center.
  • Divide the seasoned ground beef into 5 equal portions and flatten each into a very large hamburger patty. Lay an avocado in the center of one of the patties and wrap the meat around it, completely encasing the avocado. Repeat with each avocado and beef patty.
  • Wrap 5 strips of bacon around each beef encased avocado. Make sure at least most of the meat is covered with bacon.
  • Place the stuffed avocados on the grill and cook over indirect heat on medium (350F) until the meat is cooked through (grill with the lid closed), turning over once during the grilling. This will take about 1 hour.
  • You may see cheese begin to ooze out of the stuffed avocados toward the end of the grilling time. This is a good indication that they’re done cooking.
  • Brush all sides of the stuffed avocados generously with BBQ sauce and grill for another 10-15 minutes.

What kind of BBQ sauce should you use? Any kind you like! We used a sweet bourbon barbecue sauce and it was delicious. A Kansas City style sauce would be really good too.

We added a little extra BBQ sauce right before serving.

What to Serve with Avocado Burger Bombs

Each BBQ Bacon Wrapped Stuffed Avocado is really large and should actually be enough to serve two people. But you’ll still want some sides! Here are some of our favorites:

Variations

  • Cheese – try using different cheeses, such as cheddar, or a blend of cheese.
  • Seasonings – feel free to add different seasonings to the meat, based on your preference.
  • Baking – instead of grilling the BBQ Bacon Wrapped Stuffed Avocados, you can bake them in the oven at 350F.
