So here is the basics of how to make a poke cake: it’s a boxed cake mix that is cooked and then filled with a vanilla pudding mixture. It’s very easy to do and really kicks up a plain cake recipe.
Ingredients You’ll Need
- Red Velvet cake mix
- Vanilla Pudding Mix
- Milk
- Heavy cream
- Green food coloring
- Assorted Christmas sprinkles
Red Velvet Poke Cake Recipe
- To make this poke cake, first you will follow along with the instructions on whichever boxed mix you’ve picked.
- Once it’s baked and is beginning to cool, you need to poke holes all over with the bottom of a wooden spoon. Hint: if you want to get kids involved in the holiday baking this is a fun thing for them to do!
- Then, mix up your filling by whisking together pudding mix and milk. Pour that over the cake so that it pours into the holes. Use a spatula to spread it out evenly and then let it sit in the fridge to set up.
- Lastly, we make the topping which is simply heavy cream, whipped up until it forms peaks. Spread that on top and cover in sprinkles.

- 1 box red velvet cake mix
Filling and Topping:
- 2 3.4oz. boxes Instant Vanilla Pudding Mix
- 4 cups whole milk
- 2 cups heavy cream
- 10 drops green food coloring
For the Garnish:
- red sugar sprinkles
- green sugar sprinkles
- snowflake sprinkles
- white chocolate shavings
Instructions
- Prepare your cake mix as indicated on the box.
- Once baked, poke holes all over prepared cake with the back of a wooden spoon.
- Whisk together pudding mix and milk until blended.
- Pour over the cake and smooth into hole with a spatula.
- Allow the pudding to set in the refrigerator for a few hours.
- Beat heavy cream until soft peaks form.
- Add green food coloring and fold to combine.
- Spread evenly over the top of the cake and top with sprinkles and white chocolate shavings.
- Serve immediately or refrigerate before serving.
