What’s in Cranberry Baked Brie?

There are a select few ingredients that blend well with the flavor and texture of the Brie. This recipe contains ingredients like Cranberry, Pecans, and Rosemary. Each ingredient adds so much to this recipe.

How To Make Smoked Brie

If you have a Smoker, this is a great way to make this delicious Christmas appetizer. Same ingredients, but smoking the brie will added a different flavor. It’s so good!

  1. Preheat your pellet smoker to 250 degrees.
  2. Unwrap the brie and place it on the cedar planks. We had to sit two planks side by side on top of a baking rack for the best fit.
  3. Drizzle just a dab of olive oil over the top of the brie and use your brush to spread it all over it.
  4. Top with one and a half of the rosemary sprigs and place it in the smoker.
  5. Smoke for 15 minutes or until a nice light golden brown look comes over the brie.
  6. Remove the cooked rosemary and toss out.
  7. Top the brie immediately with the cranberry sauce, pecans, and leftover fresh rosemary.
  8. Serve with bagel chips or crackers and enjoy!

Tips for Smoked Brie:

  • The brie will start spilling cheese out the sides once it comes out of the smoker. If you don’t want to serve it on the cedar planks, immediately use a big spatula to safely, and quickly, move it to whatever serving tray you prefer.
  • I used mesquite pellets, but you can use pretty much any flavor pellet you prefer.
  • If you decide against the cedar planks, I would suggest using something with a solid bottom and not just setting the brie on the grate of the smoker. You’ll be cleaning up a mess otherwise.
  • If you have trouble finding a chunky cranberry sauce, I sometimes use 1 cup cranberries, ¼ cup sugar, and ¼ cup water in a saucepan. Simmer it down on medium heat for about 10 minutes, smash around the cranberries, remove from heat for 5 minutes to thicken, and voila.
  • Do not use the whole cranberry sauce at the store, it was more like the jellied version and wasn’t the best consistency for this dish.
  • You can use another oil if desired.
