These soft and chewy Easter Cookie Bars are loaded with pastel chocolate M&M’s and so pretty for any Easter gathering.

When you want a quick and easy Easter dessert, these Easter Cookie Bars is a great option. These are sometimes called “blondies” but these bars have more of a chewy cookie texture. Similar to our classic chocolate chip cookies bars.

Ingredients Needed
You only need a handfull of simple ingredients.
- Butter – I always recommend using unsalted butter, even when you are adding salt to the recipe. When you use unsalted butter you can control the salt content in the recipe.
- Brown sugar & Egg
- Flavor – you will need pure vanilla extract.
- Dry ingredients – All-purpose flour, baking powder and salt.
- M&Ms – Any Easter colored M&Ms will work with pastel colors.

How to Make Easter Cookie Bars
Just a few simple steps!
- Preheat the oven and prepare the baking dish.
- Beat the butter and brown sugar together in a large bowl.
- Add the egg and vanilla and mix it well. Next, add the salt and baking powder. Stir in the flour slowly.
- Fold in some of M&Ms and spread the sugar cookie dough batter into the prepared baking sheet.


- Bake the cookie bars for 20-22 minutes until the center of the cookie dough is done.
- Remove it from the oven and then sprinkle with the remaining M&Ms.
- Press them into the bars.
- Let them cool completely before cutting.
Variations
Mix-ins – You can add in any candies that you prefer including semi-sweet chocolate chips, dark chocolate chips, milk chocolate chips, peanut butter chips, white chocolate chips, or colorful sprinkles.
Bunny shape – Press the cookie dough into a Easter bunny shaped pan and bake. Either serve as is or frost the top with vanilla buttercream and decorate into a bunny face!
Frosting options – Consider topping with chocolate buttercream, peanut butter frosting, strawberry cream cheese frosting or cream cheese frosting!

Storing
Store leftover bars at room temperature in an airtight container for up to 4-5 days. You can also freeze the leftover squares for up to 3 months.

Easter Cookie Bars
Ingredients
- 1/4 cup butter softened
- 1 cups brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 1/2 cup flour
- 1 ½ cup M&Ms divided
Instructions
- Preheat the oven to 325 degrees.
- Line a 9×13 baking sheet or glass pan with foil or parchment paper and spray with cooking spray.
- In a large bowl using a fork, beat butter and brown sugar until mixed well.
- Add egg and vanilla and continue mixing.
- Mix in salt and baking powder.
- Slowly stir in flour.
- Fold in 1 Cup of M&Ms and spread batter on the prepared baking sheet.
- Bake for 20-22 minutes until center dough is done.
- Remove from oven and sprinkle with remaining M&Ms (press them into the cookie)
- Let cookie bars cool completely before cutting.

Simple recipe. A bit hard to mix and a 9×13 was way too big for the amount of batter this recipe made. I would try going with a smaller pan next time. I also had to bake a few extra minutes. But tasted pretty good! Very pretty and cute idea!
