Quick and easy recipes are the way to go, and this one cuts out extra ingredients without sacrificing a fluffy and chewy cookie everyone will ask for again and again.
If quick and easy is what you are looking for, our Lemon Brownies Recipe can be made from a cake mix. However you have a bit more time, you can make them from scratch.
Key Ingredients You’ll Need
- Lemon cake mix – You don’t have to prepare this according to the package. We include everything you need in this recipe.
- Melted butter – It’s always best to use unsalted butter when you’re baking so you have more control over the salt content and flavor.
- Eggs – You can’t make cookies without them!
- Lemon juice – Just a couple of tablespoons adds the perfect amount of lemon flavor.
- Powdered sugar – This is to coat the cookies and what makes them “crinkle.”
How to Make Lemon Crinkle Cake Mix Cookies
This is such a simple and quick recipe that leaves you with a delicious and beautiful cookie as the result.
Step 1: Preheat your oven to 350 degrees F. Then you will want to prepare your baking sheet before you begin. Lining it with parchment not only prevents the cookies from sticking but also cuts down on cleanup.
Step 2: Combine all of your ingredients in a medium-sized bowl. Make sure the batter is mixed well. I recommend using a hand mixer on a low setting or a wooden spoon.
Step 3: Use a 2 tablespoon to scoop the dough. This makes it much easier to form it into balls.
Step 4: Cover each ball generously in powdered sugar.
Step 5: Place the cookie balls at about 1 ½ inches apart and bake for 11 minutes.
After they are baked: Let them cool on the baking sheet for at least 7 minutes before transferring them to a cooling rack. This will ensure that they are fully set.
What is a Crinkle Cookie?
Crinkle cookies are a classic that many people love to make, especially during the holiday season! The term comes from how the cookies are coated in powdered sugar, and they crack or crinkle while baking. They are just as cute as they are delicious. There are so many different flavors of crinkle cookies, including classic chocolate.
How Do You Store the Lemon Crinkle Cookies?
The best way to keep these cookies fresh is to store them in an airtight container. They will be just fine at room temperature, so there’s no need to worry about refrigeration. These easy cake mix cookies will last up to 4 days when stored properly unless they are all eaten before.
Tips and Tricks
- If you want a little extra powdered sugar, you can sprinkle a little extra on the cookie dough balls before baking. Do not add any to the lemon crinkle cookies after they’re baked. This will cause them to lose their “crinkle.”
- Feel free to use a smaller cookie dough scoop if you wish. It will yield more cookies which is always a good thing.
- The Betty Crocker Delights Super Moist Lemon Cake Mix (15.25 oz) is my favorite to use, but you can use whatever brand you prefer.
- Fresh lemon juice is always best, but if you have it bottled, it will still work fine!
