What You’ll Need

This is a super basic and delicious homemade pancake recipe that includes rainbow sprinkles! It’s so straightforward and uses many kitchen staples.

  • Flour: I use simple all-purpose flour for this recipe. If you want a gluten-free version, feel free to substitute your favorite gluten-free blend.
  • Sugar: White granulated sugar is what I use as a sweetener for the pancakes, which is the same for most easy recipes.
  • Salt: Adding a little salt balances the flavors of the other ingredients.
  • Baking powder: This leavening agent is key in achieving super fluffy pancakes.
  • Butter: Melt the butter before you add it to the pancake batter. Ensure it is not hot before you mix it in so it doesn’t cook the eggs or curdle the milk.
  • Milk: I chose whole milk but 2% should be fine as well. I haven’t tried this recipe with plant-based milk but I bet it would be great, too.
  • Egg: Ensure your eggs are at room temperature so they incorporate into the batter better.
  • Vanilla: I love pure vanilla extract because it helps to give the pancakes that authentic birthday cake flavor.
  • Sprinkles: You can’t have Funfetti without rainbow sprinkles! If you want to make these for a holiday, consider red and green sprinkles for Christmas or red, white, and blue for a patriotic holiday!

How to Make Funfetti Pancakes

Below is how to make the perfect Funfetti pancake batter and how to cook them to golden brown perfection. If you don’t have an electric griddle pan, feel free to use a flat, large skillet instead over medium heat.

  • Heat your griddle. Preheat your electric griddle to 275 degrees F.
  • Mix the dry ingredients. Combine the flour, sugar, salt, and baking powder in a large mixing bowl. Stir them well with a whisk.
  • Add the wet ingredients. Beat in the melted butter, milk, egg, and vanilla with a whisk or an electric mixer until it’s smooth.
  • Stir in the sprinkles. Then, gently stir in the rainbow sprinkles.
