This Mixed Berry Crisp combines sweetened strawberries, raspberries, blueberries and blackberries topped with a oat streusel and then baked to perfection!

This berry crisp is my go-to Summer dessert! We make this often when we want a quick dessert and this is also great to bring to backyard BBQ’s. The four different kinds of berries and oatmeal crisp topping makes the perfect combo.

Ingredients Needed

Fresh berries and a handful of common ingredients is all you need (get the full amounts in the recipe card below).

  • Berries – Strawberries, raspberries, blueberry and blackberries.
  • Sugars – granulated sugar and light brown sugar.
  • Vanilla Extract
  • Oats – old-fashioned oats.
  • Butter – salted butter is best.
  • Cinnamon – this is optional, but gives a nice flavor to the topping.

How to Make Mixed Berry Crisp

Just 10-15 minutes of prep is all you need!

  • Preheat the oven to 350 degrees.
  • Chop the strawberries and add them, along with the rest of the berries, into an 8×8 baking dish. Add the sugar and vanilla into the berries and mix to combine, until fully coated.
  • Prepare the Topping – use a pastry blender to combine the topping ingredients in a medium bowl until it forms pea-size crumbles.
  • Assemble and Bake – Add the topping onto the mixed berries and place into the oven for 45 to 50 minutes until light brown, and the juices of the berries begin to bubble around the sides of the pan.
  • Serve warm!

Tips

Can I use frozen berries? Yes! Using fresh fruit will give the recipe the best results. However, you can thaw out frozen berries and proceed with directions.

Berries. This recipe can be made with any kind of berry ratio so long as the total amount of berries is 6 cups.

Top the berry crisp with your choice of whipped cream, yogurt or a scoop of vanilla ice cream and serve warm.

Storing Berry Crisp

This berry crisp needs to be refrigerated. When using fresh fruit, you will always need to place it in the fridge. Keep in an airtight container in the fridge for up to 3-4 days.

  • 2 cups strawberries chopped
  • cups raspberries
  • cups blueberries
  • 1 cup blackberries
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

Topping

Instructions

  • Preheat the oven to 350 degrees F.
  • Chop strawberries and add all berries to an 8×8 (or equivalent) baking dish with sugar and vanilla and stir to combine until the berries are evenly coated.
  • In a medium bowl, use a pastry blender to mix together the topping ingredients until the butter is pea-sized and the mixture is coarse.
  • Sprinkle the crumble topping over the top of the berries and bake for 45 to 50 minutes until the top is golden brown and the berry juices are bubbling up around the edges of the pan.
  • Serve warm or room temperature with whipped cream or ice cream.
