These soft and chewy strawberry oatmeal bars are ridiculously delicious and simple to make. You’ll fall in love with the juicy strawberry filling tucked between buttery oatmeal layers, baked golden in the oven. Whether you’re looking for a light dessert or easy after school treat, these bars will not disappoint. Every time I make them, they disappear from the plate and someone always begs for the recipe. They’re always shocked to know how easy this recipe really is!

  • Dry Ingredients – All-purpose flour, almond flour, baking powder, and cinnamon. Feel free to use only all-purpose flour if you prefer (or, use only almond flour if you’re making these bars gluten-free).
  • Butter – Unsalted butter, brought to room temperature before you start.
  • Sugar – Similar to cookie dough, I like to use a combination of granulated sugar and brown sugar for extra moisture in these bars.
  • Oats – Either quick oats or rolled oats will both work in this recipe.
  • Strawberries – This recipe uses a mixture of strawberry preserves and sliced fresh strawberries in the filling. It gives the bars the perfect amount of sweetness and sticky, gooey texture.

Can I Use Frozen Strawberries?

I always love using fresh ingredients to give desserts the best flavor. However, if you don’t have fresh strawberries for this recipe, you can use frozen ones. Make sure to thaw them completely and drain them well beforehand.

How To Make Strawberry Oatmeal Bars

Here’s a short and sweet step-by-step showing how to make these tasty strawberry bars from scratch. Scroll down to the recipe card for printable instructions.

  • Mix the dry and wet ingredients separately. Start by whisking together both flours, baking powder, and cinnamon in a bowl. In a second bowl, cream the butter and both sugars until they’re light and fluffy.
  • Combine. A little at a time, beat the dry ingredients into the butter mixture to form the dough. Lastly, knead in the oats by hand.
  • Assemble the bars. Press about 2/3 of the prepared dough into the bottom of a lined 9×13-inch baking pan. Top this with strawberry preserves, followed by a layer of fresh strawberries. Finally, crumble over the remaining dough.
  • Bake. Bake the bars at 350ºF for 45-50 minutes. When the top is nicely browned, let the bars cool and then slice them.

Tips and Variations

Follow these tips for the best strawberry oatmeal bars:

  • Don’t overbake. Overbaking these bars will make them dry and crumbly. Take them out while they’re still a little underdone, and they’ll continue to set up as they cool in the pan.
  • Add a glaze. To make these strawberry oatmeal bars even more dessert-worthy, drizzle the baked and cooled bars with the vanilla glaze from my strawberry scones recipe. And don’t forget to serve your slices topped with a scoop of vanilla ice cream!
  • Different filling. Instead of strawberries, fill these bars with any fruit preserve you’d like. Try raspberry, blueberry, peach, or cherry.

How To Store Strawberry Oatmeal Bars

Store your strawberry oat bars in an airtight container. These bars can be stored at room temperature, but if you want them to last longer, I recommend storing them in the fridge or even the freezer.

Strawberry Oatmeal Bars

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup butter 2 sticks unsalted, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 cups quick oats
  • 1 18 ounces jar strawberry preserves
  • 1/2 cup fresh strawberries diced

Instructions

  • Preheat the oven to 350°. Line a 9×13 cake pan with parchment paper. Set aside.
  • In a medium mixing bowl, whisk the flour, almond flour, baking powder, and cinnamon together. Make sure it’s mixed well and set aside.
  • Beat the butter, granulated sugar, and brown sugar together in a separate large bowl with an electric hand mixer until it is fluffy.
  • Pour about a third of the flour mixture into the sugar mixture, and beat on medium speed until it is well mixed. Add in the rest of the flour mixture and continue beating until you have a rough dough.
  • Pour in the oats and knead them into the dough with your hands until they are evenly distributed.
  • Take about two-thirds of the dough, and press it into the base of the 9×13 pan.
  • Spread the strawberry preserves evenly over the dough, distribute the fresh strawberries pieces, and sprinkle the last third of the dough on top.
  • Bake in the preheated oven for 45-50 minutes, or until the crumbled dough on top is golden brown.
  • Rest the pan on a cooling rack until the bars reach room temperature. Cut into 16 bars.
  • Serve at room temperature.
