They fall somewhere between a chewy strawberry oatmeal bar and a fresh, fruit-filled crumb bar. Every juicy bite melts in your mouth. These bars are the perfect light after-dinner treat, and we also love them as a sweet snack throughout the day. All it takes is a handful of ingredients and a little over an hour in the kitchen.

  • Oats – The best oats for these strawberry oatmeal bars are old-fashioned rolled oats. Avoid instant oats as they’ll be soften too much in the crust and topping.
  • Butter and Milk – Unsalted butter that’s cold from the fridge, and milk. You can use whole milk or 2% milk.
  • Strawberries – It’s best to use fresh diced strawberries, but you can use frozen. You’ll mash and toss the berries with vanilla extract, cinnamon, flour, and sugar to make a thick and sweet filling for the bars.
  • Powdered Sugar – To combine with milk to make a creamy glaze to pour over top.

How To Make the Best Strawberry Bars

These sweet strawberry bars come together in just a few easy steps. I’ll walk you through them below! Scroll to the recipe card for printable recipe instructions.

  • Combine the crumble ingredients. Whisk together flour, oats, sugar, salt, and baking powder. Cut in cubed cold butter, and then add milk. Once you have a crumbly mixture, set about 1/3 of it aside. This will be your topping later on.
  • Prepare and parbake the crust. Press the rest of the crumble into the bottom of a greased 9×9-inch baking dish for the crust. Bake at 350ºF for 30 minutes, until it’s lightly browned.
  • Prepare the strawberries. First, gently mash the strawberries and drain the excess juice. Next, add vanilla, cinnamon, flour, and powdered sugar, and stir everything together.
  • Assemble and bake the bars. Add the strawberry filling over top of the parbaked oatmeal crust. Sprinkle the reserved crumble over the strawberry layer. Afterward, return the bars to the oven at 350ºF for 25 minutes.
  • Add the glaze. Allow the strawberry bars to cool completely to room temperature. Then, whisk together milk and powdered sugar. Drizzle the glaze generously over the baked bars, and serve!

Tips and Variations

These bars are such a treat and the best part is, it doesn’t take much for them to turn out delicious. Here are my final tips, plus some easy variation ideas to try:

  • Let the bars cool completely. Make sure that the bars are at room temperature before you add the glaze. Otherwise, it’ll melt right off.
  • Use strawberry jam. This is an easy “hack” if you’re pressed for time! Fill these bars with your favorite strawberry jam or preserves instead of fresh or frozen berries.
  • Different fruit filling. They won’t be strawberry bars, but you can adapt the filling to use just about any fruit your heart desires. Try blueberries, raspberries, blackberries, or cherries. You might also like these strawberry lemon bars.
  • Serve with ice cream. Probably my top tip for these bars is to serve them topped with a scoop of vanilla ice cream. Or, go all out with strawberry cheesecake ice cream. You won’t regret it!

How to Store Strawberry Bars

Place these strawberry bars in an airtight container or Ziploc bag to keep them at their freshest. You can store the bars in the fridge for up to 1 week or in the freezer for up to 3 months.

Strawberry Crumb Bars

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Combine flour, oats, sugar, salt, and baking powder in a medium bowl.
  • Cut butter into slices and add to the bowl. Use a pastry cutter to cut in butter until the pieces are pea-sized.
  • Add milk and mix.
  • Spray or line with parchment paper a 9”x9” baking dish. Press about 2/3 – ¾ of thecrumble into the dish. Set the remaining amount aside. Bake for 30 minutes – should beslightly browned at the edges.
  • While the bottom layer is baking, prepare the strawberries. Place in a medium bowl anduse a potato masher to lightly mash. Drain the excess juice.
  • Add vanilla, cinnamon, flour, and powdered sugar to strawberries. Mix to combine.
  • When the bottom layer is done, remove it from the oven and spoon the strawberry mixture ontop. Sprinkle with remaining dry mix.
  • Bake for an additional 25 minutes. Let cool completely.
  • Prepare glaze by mixing milk and powdered sugar. Drizzle over bars before serving.
