Ingredients for the Cinnamon bread
- Flour: I use all-purpose flour for this recipe. You may use your favorite gluten-free blend if you prefer.
- Sugar: For this bread recipe, I use both white sugar and brown sugar. I love the deep molasses flavor of brown sugar and I feel it pairs well with the cinnamon.
- Baking soda/powder: I use a combination of baking soda and baking powder so the bread rises properly and has a fluffy, cake-like texture.
- Spices: Since cinnamon is the star, I chose to use only cinnamon and salt to enhance the flavors of the other ingredients.
- Buttermilk: I love buttermilk in this recipe! It adds so much moisture and flavor to the bread batter.

How to Make Cinnamon Bread
Here are the instructions on how to make the cinnamon bread, the cinnamon swirl, and how it comes together so you get those delicious bites of cinnamon throughout the soft bread.
- Prep the oven and loaf pan. Preheat your oven to 350 degrees F. Then, spray a 9×5 loaf pan generously with nonstick cooking spray.
- Combine the dry ingredients. Add flour, sugar, baking soda, baking powder, salt, and cinnamon to a medium mixing bowl. Whisk the ingredients until they are well combined.
- Combine the wet ingredients. In a larger separate bowl, whisk buttermilk, oil, vanilla, and eggs until well-mixed.
- Mix it. Gradually mix the flour mixture into the egg mixture.
- Make the cinnamon swirl. Combine cinnamon and melted butter in a small bowl.
- Add the batter and swirl to the pan. Pour half of the bread dough into the loaf pan. Next, pour in half of the cinnamon mixture. Swirl it together with a knife. Add the remaining dough on top and then the remaining cinnamon mixture. Swirl it together.
- Bake. Put the pan in the oven and bake it for 50-60 minutes. Insert a knife or toothpick into the center to check for doneness.
- Cool. Allow the cinnamon bread to cool for 10 minutes in the pan. Then, transfer it to a wire rack to cool completely.
- Make the glaze. Combine the powdered sugar, cinnamon, and milk in a small bowl until it’s smooth.
- Add to the bread and set. Brush, drizzle, or pour it over the cooled bread and allow it to set. Then, slice and enjoy!
Tips and Variations
- Use a sheet pan. Place the rectangle loaf pan on a sheet pan to make it easier to remove from the oven.
- Don’t use an electric mixer. It isn’t necessary to beat any of the ingredients so I recommend using a whisk so you don’t overmix the batter.
- Skip the glaze. This is optional if you want just plain cinnamon swirl bread or you could top with a sprinkle of cinnamon sugar.
- Add-ins. Mix in some chopped nuts like pecans or walnuts.
Proper Storage
Store this cinnamon bread tightly covered with plastic wrap at room temperature for 2-3 days without the glaze and 2-3 days in the refrigerator with the glaze. Freeze it without the glaze by placing it in a freezer bag. It will stay fresh for up to 2 months.

Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 ½ teaspoons baking powder
- ½ teaspoon kosher salt
- 1 Tablespoon ground cinnamon
- 1 cup buttermilk
- ⅓ cup canola oil
- 1 teaspoon pure vanilla extract
- 2 large eggs
- ½ cup brown sugar
Cinnamon Swirl
- 1 ½ Tablespoons ground cinnamon
- 2 Tablespoon unsalted butter melted
Cinnamon Glaze
- 1 ½ cups powdered sugar
- 1 teaspoon ground cinnamon
- ¼ cup milk
Instructions
- Preheat oven to 350 degrees and spray a 9×5 loaf pan with pam baking spray
- Using a medium bowl, whisk together the flour, sugar, baking soda, baking powder, kosher salt, and the cinnamon.
- Using a large bowl, whisk together the buttermilk, canola oil, vanilla and eggs until combined.
- Gradually beat in the dry ingredients until combined.
- Using a small bowl, whisk together the melted butter and 1 1/2 tbsp ground cinnamon until combined.
- Pour half of the bread batter into the loaf pan.
- Pour half of the cinnamon butter mixture onto the batter.
- Using a knife, swirl the cinnamon butter mixture into the batter.
- Top with the remaining batter.
- Swirl the rest of the cinnamon butter mixture into the batter.
- Place the bread pan onto a cookie sheet and place into the preheated oven and bake for 50-60 minutes or until a knife comes out clean.
- Allow cooling for 10 minutes before removing and placing onto a wire rack.
Cinnamon Glaze
- Using a medium bowl, whisk together the powdered sugar, cinnamon, and milk until combined.
- Pour over the bread and allow the glaze to set before enjoying!
