Root Beer Float Freezer Pie
This is such an epic summer dessert. It’s cool, creamy, refreshing and tasty. You don’t have to turn on the oven or stand in a hot kitchen for long. Just mix and go. It also is a wonderful recipe for kids to help make since you aren’t using any heat and it’s really simple.
This root beer float pie is filled with pudding, whipped cream, and plenty of root beer flavor, on top of a buttery graham cracker crust.

Ingredients You Will Need
The ingredients you need are fairly simple, with the base being vanilla pudding. Of course, you’ll need your favorite brand of Root Beer. I love A&W and Barq’s the best. Find the full amounts in the recipe box below.
- Root Beer soda – any brand will work here.
- Milk – whole milk or low fat will work fine. Just avoid using skim milk.
- Vanilla Pudding – the instant pudding mix.
- Root Beer Extract– if you can’t find any at a local store use the link to grab it on Amazon.
- Cool Whip – thawed completely, so it will mix easily. You can also make our easy Homemade Whipped Cream Recipe.
- Graham Cracker Crust – pre-made, found in the baking aisle.
- Cherries – optional for garnish.
- Root Beer Barrel Candy – optional for garnish.
Substitutions
ROOT BEER EXTRACT: The root beer concentrate is necessary to keep the root beer flavor. We love the Watkins brand of root beer extract and can be found in most grocery stores. However, any root beer extract will work fine.
ROOT BEER: You can substitute sugar-free root beer for regular root beer in this root beer float freezer pie recipe. A&W makes a good zero sugar root beer.
PUDDING: You can substitute a 1.5-ounce box of sugar-free instant vanilla pudding mix for the 3.4-ounce box of instant vanilla pudding.


How To Make Root Beer Pie
This freezer pie recipe truly is super easy. Stir a few things together, freeze it and you’re done! It’s exactly the kind of dessert recipe I want to have around in the hot Summer months.
- Whisk the pudding mix with the root beer, the extract and the milk. Stir it until it thickens just like you usually would when making instant pudding.
- When the pudding is thickened, stir in the Cool Whip.
- Put the pie mixture in your crust and place in the freezer.
- Freeze the pie for at least 8 hours or just leave it overnight.
- Add the whipped cream and cherries for garnish and serve.

How Do I Store The Root Beer Float Pie?
When you aren’t serving this, you’ll want to store the pie in the freezer. Add a layer of plastic wrap to keep it from freezer burning and store for up to 1 month.
Can I use a different soda?
I have never tested this recipe with any other sodas, but it should work just fine! If you try it, let us know how it turns out.

Root Beer Float Pie
Ingredients
- 3/4 cup root beer
- 1/2 cup milk
- 1 box instant vanilla pudding mix 4 serving size
- 1-2 Tbsp root beer extract
- 8 oz Cool Whip thawed
- 1 graham cracker crust prepared
Garnish:
- Cherries and whipped cream
- Crushed root beer barrel candy
Instructions
- Whisk together the root beer, milk, root beer extract and pudding mix for 2 minutes. (or until it thickens)
- Gently fold in Cool Whip until combined
- Scoop the mixture into the prepared graham cracker crust.
- Place in the freezer for at least 8 hours. (overnight is best)
- Remove from freezer and cut into 8 slices.
- Garnish with whipped cream and cherries.
- Sprinkle crushed root beer barrel candy on the edges of the pie and serve!
- Store pie in freezer.

Delicious. I didn’t have any extract so I reduced a can of A&W root beer to less than a quarter cup. Used it all. The taste reminds me of a root beer float! Can’t wait to try this again.

I’m going to give this a try but I think I’ll use Rootbeer Schnapps instead of the rootbeer extract. 🙂
Given the amount of extract necessary for the flavor, I’m not sure why any actual root beer is needed at all. Is there a reason it’s not just more water or milk?
Hi Brandy. The root beer does add flavor and some sweetness and the carbonation helps as well. You could substitute with milk if you prefer.
Made this dessert for my daughter’s birthday and it was a hit with everyone! They thought it was made with ice cream. Used 1 tsp of root beer extract which added just a bit more flavor. Will make this again.

I made this and it’s great. I got creative and substituted the root beer soda and extract for orange soda and extract (think Orange cream sickle) now that’s was tasty….I’m waiting on Amazon to deliver my Cherry extract and pair that up with Dr. Pepper.

This Rootbeer Float pie is absolutely wonderful. I made it for the first time today and will definitely be making it again and again.
Made it twice, once for a food day at work and the other at christmas. Needless to say everyone loved it but my daughter in law hoarded the pie at christmas cause she loves root beer. so no one got any…lol
Instead of vanilla pudding, I used Sonic Root Beer pudding. i just added a bit of vanilla to make up for missing vanilla flavor of the vanilla pudding.
