I had a lot of apples, and my kids needed a baked good for leadership camp. However they were adamant that muffins would be better, so I baked this as mini muffins. I followed one of the reviewers advice and soaked the chopped apples (very small chop) in the sugar cinnamon and then just folded them into the batter. I figured as mini muffins there was no point in layering.
I baked them for 18min, checking after 15 (my oven does take the longer bake time). It made 45… but definitely could have made 48 if I was more even in my measuring lol.

So glad that worked out Rachel! Hope they enjoyed them. Thanks!

Can I make this in a 8×8 cake pan

    1. Jill says:

Hi D. Yes you can use an 8×8. Baking time will be less. I would check at 30 minutes.

I will forever be grateful to you for sharing this recipe! It’s so amazing and my family loves when I make it. I have to make two loaves at a time and even then they only last two days. I’ve made this so many times over the last two years and kept forgetting to review. I mix the brown sugar and cinnamon together and let the apples sit in it while im mixing up the other ingredients. When im all done mixing everything at the end I just dump the apple chunks, in the brown sugar and cinnamon mix, straight into the mix. It takes it to a whole other level! When I look at recipes I enjoy reading others comments/reviews on them to learn other how others are making it or adding their special touch. Make this recipe you won’t regret it!

Very good – top tastes like apple fritter donuts from Amish market near us. As several people mentioned in comments, mine came out crumbly. I didn’t see any recommendations to correct this. If anyone experienced and corrected, please post your recommendation. Thanks
