Coconut macaroons are a special type of cookie. The are chewy but not overly soft with coconut. The combination is fantastic. Because this is a very easy recipe, it makes it easy to make them often. Since Easter is right around the corner, these cookies are perfect for making into birds nest. Even if you do not celebrate Easter you can make these birds nest to celebrate spring’s arrival.
Ingredients You Will Need
- Sweetened flaked coconut
- Sweetened condensed milk
- Almond extract
- Eggs
- Salt
- White chocolate chips
- Cadbury mini eggs
How to Make Coconut Macaroons
Preheat the oven to 325 degrees. Line 2 baking sheets with parchment paper.
In a bowl, add the coconut, condensed milk, salt, and almond extract. Stir until combined.
Using a mixer, beat the egg whites until they form stiff peaks.
Gently fold the egg whites into the coconut mixture.
Drop the macaroon batter in generous tablespoonfuls about 1 inch apart onto the baking sheet.
Press your thumb into the center of the macaroon to form the shape of a nest.
Bake the cookies for 25 minutes, until they are set and delicate brown.
Transfer to a wire rack to cool.
Put the white chocolate chips in a microwave safe bowl. Microwave for 30 second intervals stirring between them until the chips have melted.
Drizzle the melted white chocolate into the macaroon nest and place 3 of the mini eggs on top.

You want to store these coconut macaroons in an airtight container at room temperature. The cookies can also be stored in a freezer bag. These cookies do not need to be stored in the refrigerator and being chilled will change the texture slightly.
