Easy Cookie Monster Cupcakes

These Cookie Monster cupcakes are topped with the perfect blue buttercream frosting and finished off with cute cartoon candy eyes and a cookie mouth! Kids absolutely love these and they are so easy to make.

Ingredients You’ll Need

  • Dry ingredients – sugar, flour, sea salt, and baking powder.
  • Wet ingredients – egg, whole milk, vanilla and canola oil.
  • Mix-ins – mini chocolate chips and crushed Oreo cookies.
  • Frosting – butter, powdered sugar, vanilla, heavy whipping cream and royal blue food coloring.
  • Decorating – large candy eyes and mini chocolate chip cookies.

How To Make Cookie Monster Cupcakes

We highly recommend making the homemade cookie cupcake batter, but feel free to speed things up by using a box cake mix.

  • Preheat 350 degrees and line cupcake pan with cupcake liners.
  • Cream together the butter and sugar and then add the egg until light and fluffy. Mix in the milk, vanilla and oil.
  • In a large bowl mix together the flour, salt and baking powder.
  • Gradually add the dry ingredients to the wet ingredients.
  • Fold in the chocolate chips and crushed Oreos.
  • Fill the cupcake liners (in the muffin cups) 2/3 full and bake for bake for 21 minutes or until a toothpick comes out clean

Frosting and Decorating

  • Using a hand mixer, combine all ingredients in a bowl and mix on medium speed.
  • Stir in a few drops of the blue coloring.
  • Spoon the frosting into the piping bag or baggie with the corner snipped off and frost the cooled cupcakes to look like cookie monster’s fur.
  • Place candy eyes onto the top of the frosting.
  • Using a small paring knife, cut the chocolate chip cookie in half and press the flat side into the bottom corner.

Tips and Variations

  • If you’re planning for a Cookie Monster or Sesame Street party and find yourself in a pinch, you can always use any flavor of boxed cake mix and add the toppings.
  • Make mini cupcakes (adjusting the baking time) and use cookie crisp cereal instead of the mini cookies.
  • Add blue sprinkle on top like jimmies to look more like cookie monster hair.
  • If you do not have candy eyes, use marshmallows and add dots of chocolate frosting for the pupils.

Cookie Monster Cookie Dough Cupcake Variation:

Directions: Bake chocolate cupcakes. Mix crushed Oreo cookies in the blue frosting. Top the frosting with edible cookie dough. Drizzle the cookie dough with chocolate ganache and top with a halved Oreo cookies.

Ingredients
  

CupcakeS:

Frosting:

  • 1 cup unsalted butter softened
  • 2 1/2 cups powder sugar
  • 1 tsp vanilla
  • 3-5 Tablespoons heavy whipping cream
  • royal blue food coloring
  • 1 container of larger edible eyes
  • 1 bag of mini chocolate chip cookies

Instructions

Cupcakes:

  • Preheat the oven to 350 degrees. Line cupcake pan with cupcake liners.
  • Using a standing mixer, cream together the butter and sugar until light and fluffy.
  • Add the egg and mix until combined.
  • In a large bowl mix together the flour, salt and baking powder.
  • In a medium bowl, mix together the milk, vanilla and oil.
  • Gradually add the dry ingredients, alternating with the milk mixture. Mixing until combined after each add in.
  • Fold in the chocolate chips and crushed Oreos.
  • Fill the cupcake liners 2/3 full and bake for 21 minutes or until a toothpick comes out clean

Frosting:

  • Using a stand mixer, combine all ingredients and mix on medium speed.
  • Mix in a few drops of the blue coloring.
  • If the blue is to light for cookie monster add in a few more drops. Be sure to scrape down the sides of the bowl.
  • Mix until you see stiffed peaks in your frosting.
  • Spoon the frosting into the piping bag and frost the cooled cupcakes.
  • Carefully place two candy eyes onto the top of the frosting.
  • Using a sharp knife, cut the chocolate chip cookie in half.
  • Place the cookie into the bottom corner of the frosting where his mouth would be.
