How fun are these Cookie Monster cupcakes? Not only are they so adorable, but inside they are loaded with crushed Oreos and chocolate chips.
If you’re planning for a Cookie Monster or Sesame Street party and find yourself in a pinch, you can always use a boxed mix and add the toppings.

Cookie Monster Cupcakes
Makes 18 cupcakes
Cupcake Ingredients
- 1/3 C unsalted sweet cream butter, softened
- 1 C sugar
- 1 large egg
- 2 C flour
- 1/2 tsp sea salt
- 2 1/2 tsp baking powder
- 3/4 C whole milk
- 1 tsp pure vanilla
- 3 tbsp canola oil
- 1 C mini chocolate chips
- 1/2 C crushed Oreos
- Cupcake liners
- cupcake pan
Frosting Ingredients
- 1 C unsalted sweet cream butter, softened
- 2 1/2 C powder sugar
- 1 tsp vanilla
- 3-5 TBSP heavy whipping cream
- royal blue food coloring
- 1 disposable piping bag with a star tip
- 1 container of larger edible eyes
- 1 bag of mini chocolate chip cookies
Cupcake Directions
- Preheat the oven to 350 degrees. Line cupcake pan with cupcake liners.
- Using a standing mixer, cream together the butter and sugar until light and fluffy
- Add the egg and mix until combined
- In a large bowl mix together the flour, salt and baking powder.
- In a medium bowl, mix together the milk, vanilla and oil.
- Gradually add the dry ingredients, alternating with the milk mixture. Mixing until combined after each add in
- Fold in the chocolate chips and crushed Oreos
- Fill the cupcake liners 2/3 full.
- Bake for 21 minutes or until a toothpick comes out clean
Frosting Directions
- Using a stand mixer, combine all ingredients and mix on medium speed.
- Mix in a few drops of the blue coloring
- If the blue is to light for cookie monster add in a few more drops. Be sure to scrape down the sides of the bowl!
- Mix until you see stiffed peaks in your frosting.
- Scoop frosting into the piping bag
- Frost the cooled cupcakes
- Carefully place two eyes onto the top of the frosting
- Using a sharp knife, cut the chocolate chip cookie in half
- Place the cookie into the bottom corner of the frosting where his mouth would be
