Cheesy Bacon Bombs make an amazing snack, appetizer, or side dish that the whole family will love. Biscuit dough filled with mozzarella cheese and bacon, rolled into a ball and baked until golden brown, then basted with melted butter and herbs–these little rolls will melt in your mouth!

Cheesy Bacon Bombs

These little Cheesy Bacon Bombs are so good, you’ll want to make them often! We like them as a bread side with spaghetti, pizza, or chicken wings.

The Ingredients

Here’s what you’ll need to make Cheesy Bacon Bombs (the exact measurements and full recipe instructions are below in the easy to print recipe card):

  • Refrigerated biscuits – be sure you’re using the small biscuits, not the large “Grands” style biscuits. These small biscuits come in tubes that are 7.5 ounces each and usually have 10 small biscuits in each tube.
  • Mozzarella cheese – use a block of mozzarella and slice it into small chunks.
  • Bacon – your favorite variety of bacon will be perfect. Fully cook the bacon until crisp, then crumble.
  • Butter – we used regular salted butter.
  • Italian seasoning blend
  • Garlic powder
  • Marinara sauce – this is for a dipping sauce for the rolls.

How to Make Cheesy Bacon Bombs

Preheat oven to 400°F. Very lightly spray a large baking sheet with non-stick cooking spray.

Tip: Lay all of the ingredients out on a clean surface to create a little assembly line.

Open the biscuit packages and press each biscuit into a 3-inch round.

Place one cube of cheese in the center of each biscuit. Top with a heaping teaspoon of the fully cooked bacon.

Carefully wrap the biscuit dough around the cheese and bacon and seal.

Place seam side down on the prepared baking sheet, leaving about an inch between each.

Bake for 10 minutes, or until the biscuits are golden brown and the cheese is melted.

In a small bowl, combine the melted butter, Italian seasoning, and garlic powder.

Remove the biscuits from the oven and immediately brush with butter mixture.

Cool the rolls slightly so the cheese isn’t too hot to eat, then serve warm.

Easy Clean Up

For easy clean up when making Cheesy Bacon Bombs, cover the baking sheet in foil. At least a few of the rolls are bound to ooze cheese while baking, so the foil will make the cleanup so much easier.

How to Store Leftovers

Keep the leftover Cheesy Bacon Bombs in an airtight food storage container. Refrigerate for up to three days. Reheat individual servings in the microwave in 10-second intervals until warm.
