Thanksgiving Egg Roll Recipe

Leftovers are one of the best parts of Thanksgiving. But sometimes you want something different than the traditional turkey sandwich. That’s where our Thanksgiving Egg Rolls come in! These crispy rolls are filled with all your favorite Thanksgiving flavors, making for a unique and delicious meal.

What You’ll Need

  • Eggroll wrappers– You can find these in the grocery section. If you can’t find the egg roll wrappers, there are also wonton wrappers to make a bite size version.
  • Leftovers: Since these are Thanksgiving Egg Rolls, you can use whatever leftovers you like but mine are Turkey, Mashed Potatoes, Cranberry sauce, and Stuffing.
  • Vegetable oil – You can use other oils that you like for frying as well.
  • More cranberry sauce or leftover turkey gravy for dipping

How to Make Thanksgiving Egg Rolls

  • Fill the Egg Rolls: Start with the egg roll wrapper and add a sixth of each of the filling ingredients. Wet all 4 edges of the wrapper with a bit of water using your finger. Fold up the egg roll wrapper starting with the long end and tucking the short ends in before finishing rolling up. Repeat with the rest of the wrappers.
  • Fry the Egg Rolls: Heat the oil in a large skillet over medium high heat. Add the egg rolls, working in batches if needed. Fry for about 1-2 minutes per side until golden brown. Remove the egg rolls and drain off the grease. 
  • Serve with more cranberry sauce or leftover gravy for dipping.

How To Make in Thanksgiving Egg Rolls in the Air Fryer

  1. Air Fry: Brush the egg rolls with a small bit of oil and place in the air fryer seam side down. Air-fry at 400 degrees for 8-10 minutes. Flip halfway through the process for even cooking.

Storing and Reheating Egg Rolls

  • Storing Leftovers: Ensure to store any leftovers in an airtight container in the fridge. They can last up to 3 days, ensuring you can enjoy the Thanksgiving flavors a bit longer.
  • Customization: Remember, these egg rolls can be as versatile as you want them to be. Feel free to add any other Thanksgiving leftovers you have on hand.

Instructions

  • Start with an egg roll wrapper and place down a sixth of the mashed potatoes, then the turkey, then the cranberry sauce and finally the stuffing.
  • Using your finger dipped in water wet all 4 edges of the egg roll wrapper.
  • Roll up the egg roll wrapper starting with the long end and tucking the short ends in before finishing rolling up.
  • Repeat with the remaining ingredients.
  • In a large skillet over medium high heat, heat about an inch of oil.
  • When the oil is heated add you egg rolls (you may have to do this in batches).
  • Fry about 1-2 minutes per side until golden.
  • When golden on both sides remove the egg rolls from the pan and drain off the grease.
  • Serve with more cranberry sauce or leftover gravy for dipping.

Air Fryer Instructions

  • Brush the egg rolls with oil and place in the air fryer seam side down.
  • Airfry at 400 degrees for 8-10 minutes flipping halfway through.
